Comfort Food – we all want and crave it from time to time. There is just something about cabbage that I can’t resist… and it’s even better when it’s served alongside sausage (like in my favorite Cabbage and Noodles dish or Roasted Sausage and Potatoes).

In addition to cabbage and sausage, these foil packets contain tender potatoes and onions all smothered in garlic buttery goodness for the perfect meal!

While these Cabbage and Sausage Foil Packets are scrumptious, they are also super easy to prep and are ready to put on the grill in under 15 minutes!

Not to mention, foil packets make clean up a total breeze since you can simply use the foil packet as it’s own serving plate, so no need for extra dishes!

MY FAVORITE TIP that makes these turn out perfect every time… is the way the potatoes are steamed right on the grill! The steam helps the flavours mingle together and cooks the veggies until they are perfectly tender.

The trick to steaming in foil is adding just enough liquid to steam without everything becoming soggy. Easy enough right!?

The problem with adding liquid to foil packets is that very often while sealing the packet, the liquid pours out. To remedy this, simply add an ice cube!

This provides the perfect amount of liquid and makes sealing up the packets super easy and leak free!

You can definitely use your favorite sausage to customize this recipe. I love farmer’s sausage or garlic sausage, both are delicious options (you just want to make sure it’s a pre-cooked/smoked sausage).

Feel free to toss in your favorite veggies or whatever you have on hand! If you choose to add mushrooms, you may want to omit the ice cube so there isn’t too much moisture.

These Cabbage and Sausage Foil Packets are great to make ahead of time and are ready to pop on the grill when you are! This is a super idea for busy weeknights or to take to the cottage or camping where preparation and clean time is at a premium!

Cabbage and Sausage Foil Packets

Ingredients  

  • 1 pound smoked sausage cut into 1-inch pieces, I use Polish sausage
  • ½ head green cabbage cut into ½-inch wedges
  • 20 small red potatoes or yellow quartered
  • 1 small onion sliced
  • garlic butter store bought or homemade
  • salt and pepper to taste
  • 4 ice cubes

Instructions 

  • Preheat your grill to 400°F.
  • Cut four 18 x 12 inch sheets of foil. Spray well with non-stick spray.
  • Divide the cabbage, potatoes and onion over the foil sheets.
  • Add 1 ice cube to each mound.
  • Evenly divide the sausage between the packets and top with garlic butter (1-2 tablespoons per packet), salt and pepper.
  • Seal each packet well and place on grill.
  • Grill for 50 minutes flipping from the packets every 15 minutes.
  • Allow to rest 10 minutes before serving.
  • Serve with sour cream if desired.

These can be baked in the oven at 425°F for 35-40 minutes or until potatoes are fork tender. Potatoes sizes can vary, you’ll want just over 1 cup diced/cubed potato per serving. If you are concerned that your foil may leak, double wrap your packets.

  1. I seen in comments you can use in Nu Wave. Don’t put potatoes in the freezer with your packs to freeze. They will be grainy and mushy. Add to foil packs when ready to cook.

  2. Made this in the oven… was awesome! For the garlic butter I just melted each serving of butter and stirred in a bit of garlic powder then drizzled it over the packets before sealing.  Great recipe!5 stars

  4. Can these foil packets be premodern and then frozen for that weeks meal? Kinda like the crock pot meals for the month that I have used. 

    1. I haven’t tried freezing them. I think you would want to freeze without the potatoes, as they don’t freeze that well uncooked. Then add the potatoes right before cooking. Let us know if you try it Sharon!

    1. I have only tried the recipe as written. I think it would work. I’d suggest maybe cutting the sweet potatoes a bit smaller to cook at the same time. Let us know if you try it Amy!

  5. I’m going to try making a stack of these packets and putting them in the crockpot before I leave for work tomorrow. Hopefully, there won’t be any cleanup. I’ve seen the crockpot mentioned in some of the comments, but nobody said whether they used the foil or just dumped everything into the crock. I’ll let you know how it works out.

    1. I’m sure that would work perfectly. You may need to adjust the cooking time slightly. Some readers have tried with success.

    2. Please pardon me for butting in, but I personally think that would work great, but, remember that the steam must be locked in or it simply won’t work. If the steam can escape, you will be disappointed.

  6. Made this for dinner tonight. Baked in oven. Very tasty, simple and fast. little cleanup. I used hillshire beef smoked sausage. Next time I will layer ingredients in a casserole and cover with foil.

  9. What does “flipping FROM the foil” mean?  Turning it over to other side?  Doesn’t the juice run out then no matter how well sealed?

  10. I’m admittedly not the best cook ever, but so far this recipe has been a mess for us. I must be doing something wrong? We cut up almost exactly the amount of ingredients in the list, and have enough to make 6 packets, not 4. Even then, closing the packages was a mess and some aren’t sealed properly. There’s no way we could possibly “flip” them as described in the instructions, everything will fall out.

    So I decided to read the comments while waiting for it to cook. And just about when I got to the one about putting them on a pan to catch drips, I heard a bunch of “tssssss” noises coming from my oven. Yep, dripping. :o(

    So now the 6 packages are on pans and back the oven. Thankfully we have double oven because it wouldn’t all fit in one at this rate.

    Now will wait for 45 minutes and hope it’s all done by then, I’m starved (and it does smell good at least).

    I’m fairly certain next time I’ll just put it in one big pan covered in foil like someone suggested. Any idea what type (glass, metal?) and height of pan is best for that?

    1. You could certainly put them in one big pan, a glass or metal pan well sealed should be fine. Optionally, you could also cut your foil bigger so everything fits (perhaps your veggies were larger than mine). You’ll definitely want to make sure it’s sealed well to keep any drippings (and the steam from the ice) inside.

    2. Anne … make sure you bring foil sides up to meet and fold acutely several times and fold sides several times also so can’t drip.
