Is Pork Red Meat?

Technically yes. Pork is considered a red meat as it contains myoglobin. Although it’s lighter when cooked, it is still considered a red meat like beef, lamb, and veal.

What Temperature is Pork Done?

According to the Pork.org, pork should be cooked to an internal temperature of 145°F for medium rare, 150°F-155°F for medium, and 160°F for well done. This should include a resting time of about 3 minutes.
