Tender potatoes, smoky sausage, onion and sweet cabbage seasoned with garlic butter and all cooked in a tidy little packet on the grill!
This foil packet dinner is perfect as an effortless summer meal or as a delicious way to prepare ahead of time while you’re camping!

Comfort Food – we all want and crave it from time to time. There is just something about cabbage that I can’t resist… and it’s even better when it’s served alongside sausage (like in my favorite Cabbage and Noodles dish or Roasted Sausage and Potatoes).
In addition to cabbage and sausage, these foil packets contain tender potatoes and onions all smothered in garlic buttery goodness for the perfect meal!
While these Cabbage and Sausage Foil Packets are scrumptious, they are also super easy to prep and are ready to put on the grill in under 15 minutes!
Not to mention, foil packets make clean up a total breeze since you can simply use the foil packet as it’s own serving plate, so no need for extra dishes!

MY FAVORITE TIP that makes these turn out perfect every time… is the way the potatoes are steamed right on the grill! The steam helps the flavours mingle together and cooks the veggies until they are perfectly tender.
The trick to steaming in foil is adding just enough liquid to steam without everything becoming soggy. Easy enough right!?
The problem with adding liquid to foil packets is that very often while sealing the packet, the liquid pours out. To remedy this, simply add an ice cube!
This provides the perfect amount of liquid and makes sealing up the packets super easy and leak free!

You can definitely use your favorite sausage to customize this recipe. I love farmer’s sausage or garlic sausage, both are delicious options (you just want to make sure it’s a pre-cooked/smoked sausage).
Feel free to toss in your favorite veggies or whatever you have on hand! If you choose to add mushrooms, you may want to omit the ice cube so there isn’t too much moisture.

Ingredients
- 1 pound smoked sausage cut into 1-inch pieces, I use Polish sausage
- ½ head green cabbage cut into ½-inch wedges
- 20 small red potatoes or yellow quartered
- 1 small onion sliced
- garlic butter store bought or homemade
- salt and pepper to taste
- 4 ice cubes
Instructions
- Preheat your grill to 400°F.
- Cut four 18 x 12 inch sheets of foil. Spray well with non-stick spray.
- Divide the cabbage, potatoes and onion over the foil sheets.
- Add 1 ice cube to each mound.
- Evenly divide the sausage between the packets and top with garlic butter (1-2 tablespoons per packet), salt and pepper.
- Seal each packet well and place on grill.
- Grill for 50 minutes flipping from the packets every 15 minutes.
- Allow to rest 10 minutes before serving.
- Serve with sour cream if desired.

Holly why do you keep repeating “these can be baked in the oven at 425 for about 35 minutes…” when a few people asked, “can they be baked in foil in the oven” but you never seem to have given this answer.
This is correct, these can in fact be baked in the oven in foil for 35 min at 425F.

Very good! Made this for dinner. I made it in the oven 45 min. at 425 degrees.
I usually make this in a skillet but decided to try it in the oven! Used Yukon gold potatoes and Hillshire Farms kielbasa. Diced the potatoes and tossed with olive oil, salt, pepper, garlic powder and paprika then placed in a baking pan. Chopped the cabbage and stirred them together, then added the kielbasa (I cut into 1-inch rounds, then cut those in half). Added a bit more salt, pepper, and garlic powder and about 1/4 cup vegetable broth instead of ice or water. I’d normally use chicken broth but was out! Covered with foil at 425 for 35 mins! Delish!!! Next time I would roast the potatoes first while I chop the cabbage, etc. as my fiancé prefers the potatoes a bit more crispy! This recipe is a keeper!!!

Ya know? How many times are people going to ask the oven question?!! I wouldn’t have answered every time, absolutely ridiculous! Wow, duh, read people!
I gave it a bit of a twist – did it with raw Italian sausage and cabbage (on a Keto diet) – threw in a couple tablespoons of butter (just for added flavour), salt & pepper and a little garlic powder, made a pouch, threw it on a cookie sheet (in case it leaked) and cooked in the oven at 425F for 40 mins as you suggested.
The cabbage was perfect and the sausage was cooked all the way through. (then had all of that glorious sausage jus – no additional butter needed for the cabbage!) :)
I had pre-heated my grill – finished the sausage – a couple minutes each side just to get a good maillard reaction on the outside. Drizzled it with the sausage au jus and it was awesome!!! :)

These make a great twist on the “Hobo dinners” that we do with our boyscouts.
Theirs has hamburger, potatoes, carrots, onions and seasonings. This would make a great substitute!
Tried in 425-degree-oven for 40 minutes, potatoes (I used Baby Dutch potatoes, quartered) weren’t cooked at all. Put the packets back in the oven for another 25 minutes and that did the trick. Great recipe. Will absolutely make again.

Can you use an aluminum Pan and top with foil to make more faster for a family of three
I’m sure that would work perfectly. You may need to adjust the cooking time slightly.
