Slow Cooker Salisbury Steak

This easy Salisbury steak one of our favorite family meals!  I love using my slow cooker any time of year! We serve this on top of garlic mashed potatoes or rice but my all time favorite is serving it over cooked macaroni noodles.  Add a side salad and you’ve got the perfect meal!

Since I’m the one who does most of the cooking, I love coming home to a ready meal and this easy slow cooker Salisbury Steak recipe tops my list.

The beef patties simmer all day in a rich gravy with mushrooms and onions resulting in a really flavorful dish and making them extra tender.

A lot of people confuse Salisbury steaks (which is a combination of ground beef in gravy) with Swiss Steak which is generally minute steak with a tomato-based sauce. (You can find my favorite Swiss steak recipe here).

Tips for Crockpot Salisbury Steak

This Easy Salisbury Steak can be prepared in a skillet but I love it in the slow cooker since it can be prepped ahead of time and it’s ready right when we get home from soccer practice.

  • Homemade patties: it doesn’t take long to make the beef patties homemade, and they taste absolutely delicious.
  • Sear the Patties: The simple step of searing the beef patties just helps them to hold their shape without falling apart plus browning meat always adds extra flavor!
  • Freeze Option: I often double the beef patties in this recipe and freeze half of them (without browning them first) for next time. If you happen to have pre-made frozen beef patties they can be used in this recipe as well with great results.
  • Ground Turkey Option: We have also made this recipe with ground turkey (I also add a bit of celery to the mixture) and a turkey gravy with great results. The patties always come out flavorful and fork tender.

Once seared the patties are layered in the Crock Pot with sliced onions and mushrooms. Next, I combine the gravy ingredients and pour it over the patties. While some recipes do call for cream of mushroom soup, I prefer this version with a richer darker gravy.

Easy Salisbury Steak Leftover Idea

Should you be lucky enough to have leftovers (we rarely do), this reheats perfectly and makes a great messy sandwich in a hamburger bun topped with sliced tomatoes and mayonnaise.

Slow Cooker Salisbury Steak

Ingredients  

  • 6 ounces mushrooms sliced
  • ½ medium yellow onion sliced
  • 1 ½ cups beef broth or low sodium beef broth
  • 1 ounce brown gravy mix 1 packet
  • 2 tablespoons ketchup
  • 1 teaspoon Dijon mustard
  • 2 tablespoons chopped fresh parsley or 2 teaspoons dried
  • 2 tablespoons cornstarch
  • 4 tablespoons water

Beef Patties

  • 1 ½ pounds lean ground beef
  • 1 egg yolk
  • ¼ cup minced onion
  • cup Panko bread crumbs
  • 3 tablespoons milk
  • 1 clove garlic minced
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  • Place mushrooms and onions in the bottom of your slow cooker.
  • Combine beef patty ingredients and form 6 patties. Brown over medium high heat (about 3 minutes per side).
  • Layer beef patties over mushrooms. Combine remaining ingredients except water and cornstarch. Pour over beef and cook on low 5 hours.
  • Once cooked, remove patties and set aside.
  • Turn slow cooker onto high. Combine cold water and cornstarch. Stir into the broth and let cook a few minutes until thickened. Add beef back into the sauce to coat.
  • Serve over mashed potatoes or rice.

  4. I made this today. I didn’t have time to crockpot it, so I used a Dutch oven, worked out prefectly. 350, 45 min. It was great. I love mushrooms so I used 24 oz… I would like to see if crockpot turns out the same. Def a recipe to make on a reg basis.

    1. I made it the 2nd time in my cast iron dutch oven on stove top. It is great either way. Also, 2nd time I made double, Intending to freeze half but we ate it for lunch the next day ! It was voted right into the meal rotation after the first time and it’s what’s for dinner tomorrow!

  6. I would like to make this but it will have to be in the crockpot for longer than 5 hours as I will be at work. Will this mess up the recipe?

    1. I have only made this as written. If you do cook it longer, I would love to hear how it works out for you because I know others have had the same question.

  7. I work and 5 hours will not be convenient. Is 8 hours too long (with 1 hour on warm?) or is 4 hours on warm better?

    1. I’ve only tried it as written. I think you’d be better off with longer on warm as long as your slow cooker keeps it at a safe temp. If you try it, I’d love to hear how it works out for you.

  9. if I double the recipe will it take longer to cook ? should I cook on high for a couple of hours then turn down to low for the other 3 hours ? I want to make this tonight for my large family … thank you in advance for your fast response :)

    1. The cooking time should remain about the same. You could put it on high for the first 30-60 minutes just to help it heat a little bit quicker but other than that it should work fine.

  10. One change I made is to use 2 cups of broth instead of 1 1/2. The gravy that it makes for leftovers was just not enough.

      1. Can I keep it in low for around 8 hours since I will be at work or wI’ll they get too mushy

      2. I haven’t tried it but I don’t think they’ll get mushy. If anything, depending on the meat you use, they could dry out a bit. If you do try it, I’d love to hear how it works for you as I’m sure others are wondering the same thing!

    1. It does make 6 patties but if the teens are big eaters like my son was you may like to 1.5x or 2x the recipe. The good news is that these reheat perfectly!

  13. Question: what do you mean by Dijon? Dijon mustard? If so, can I use regular dry mustard or regular yellow mustard?

    1. Great question. Yes, dijon mustard. If you don’t have dijon you could use try using a little bit of dry mustard (maybe ¼-½ teaspoon).
