I make turkey dinner (or ham) for pretty much every holiday but I also make it when it’s not a holiday so I can reap the benefits of the leftover turkey (the best part in my opinion)!! Leftover turkey is perfect for quick and easy meals and in particular, belly warming soups!

Cajun Bean Turkey Soup (Slow Cooker) Tips
- Add acidic ingredients (such as canned tomatoes or lemon juice) after the beans have softened. (These ingredients can sometimes interfere with the rehydration process).
- Salt can also interfere with rehydration so it is best added after the beans have softened.
- Smoked turkey adds amazing flavor to this recipe.
- Add tomatoes with chilis for an extra kick if you like spice.
- Any type of smoked sausage works well. Frying your sausage before adding to the soup adds great flavor.
Both the dark and white leftover turkey meat cook to perfection in this recipe. If you don’t have sausage on hand, chopped ham or even crisp fried bacon are great alternatives to add a hint of smokiness.

15 Bean Soup (Slow Cooker)
HamBeens Cajun 15 Bean Soup can be found in the dry bean section of almost any grocery store (or you can order them online). Along with the beans, a seasoning packet is included in each package making it simple and perfectly seasoned every time!
This slow cooker turkey soup recipe comes out nice and thick & hearty, just the way we love it! If you prefer a thinner consistency, add one extra cup of broth or water to your Crock Pot.
While soaking the beans in this recipe definitely is not required, if you have already soaked your beans, you can reduce the liquid in the recipe by 1 cup.

Equipment
Ingredients
- 1 (20 ounce each) bag HamBeens® Cajun 15 BEAN SOUP
- 1 green bell pepper diced
- 1 large onion diced
- 1 cup diced celery
- 2 cloves garlic minced
- 8 ounces smoked sausage sliced
- 2 cups cooked chopped turkey or shredded
- 4 cups reduced sodium chicken broth
- 2 cups water
- 1 (14.5 ounce each) can diced tomatoes
- salt and black pepper to taste
- chopped fresh parsley for garnish, optional
Instructions
- Rinse beans and remove any debris.
- Place beans, onion, pepper, celery, garlic, chicken broth, water, and turkey a 6 quart slow cooker.
- Cook on high 5-7 hours or until beans are tender.
- Add seasoning packet, sausage and tomatoes.
- Cook for an additional 30 minutes.
- Serve with cornbread.

Would it be alright to use chicken instead of turkey? I’m glad to find a different recipe using the Hurst cajun beans…..I ordered some online and forgot I did, then ordered some again, plus I found some I’d purchased some at Walmart (didn’t realize they had that brand there!) awhile back…..long story short, I have at least eight bags of them to use up! Fortunately, the family likes beans!
Chicken will work just fine in this recipe.

If I have no leftover Turkey can I use Turkey not cooked

I was just about to make this and realized I bought the regular Hambeen 15 bean soup. Not the Cajun. I don’t think my local store sells the Cajun. What can I do? Make my own Cajun seasoning?
It should work just fine and you can add your own Cajun seasoning. I have recipe for Cajun Seasoning here if you need one!

I have never seen “Cajun Beens” in any supermarket here in Napa, California. I have often made red beans & rice, but that involves soaking
You can usually find them at Walmart (or online here on Amazon) but if you can’t find them you can always use Hurst’s 15 Bean Soup with homemade cajun seasoning as well!
Holly i just made the soup and it’s better then you described. I love it! I threw in a whole jalapeno, bones with trimmings from my smoked turkey.

Made these in my instant pot. only thing i did different was use ham hocks with andouille sausage, i also used the tomatoes with chili’s and had to add a bit more water. I think by pressure cooking them the water evaporated more making it really thicker. Of course a touch more of salt and pepper to taste.

Most people think of soup as a cold weather food but as I am a soup lover it makes no difference to me if it’s 100 degrees!!! That being said, I live in the deep south, have visited New Orleans & would move there just for the food! So I decided to give this recipe a try yesterday & it is absolutely delicious. Not too spicy with just a subtle amount of heat, it was great! I’m thinking about possibly adding some red pepper flakes next time & possibly trying it with some Mexican cornbread for a little more kick. Wonderful recipe & highly recommended!

This is one of the finest recipes I have ever cooked. In these cold winters we have here in Pennsylvania every one is looking for a soup to warm them up. We make a number of soups every year but we made this one this year. It was almost impossible to keep every one full of this soup. Everyone love it and keep coming back for 2nds and 3rds but we never run out. Everyone said this was the finest soup they had ever eaten. Thank you for your RECIPE and from all the people that we feed they ABSOLUTELY love it.

Can you make the soup without the turkey?
Sure you can, it’s delicious with just sausage too!
How much Cajun Season do I use if I don’t have the Season Packet from the Beans
I would suggest 1-2 teaspoons.
Would have loved to try this recipe but have beans on hand and Cajun spice on hand would have liked an alternative to going out and BUYING the product you’re promoting.

I don’t find it too spicy and my kids enjoy it as well.
This was very good but I used crushed instead of diced tomatoes – mistake but still tasty and filling. I will make this again soon.
