Meet BAILEY’S BROWNIES!! Deliciously chocolatey brownies covered with a smooth creamy Baileys frosting and topped with a rich boozy Baileys chocolate ganache. You’ll be dreaming about these!

This recipe starts out with your favorite brownies baked in a 9×13 pan and cooled. You can use a homemade recipe or even a box mix to make it extra easy and quick!
Once cooled, a layer of frosting is spread across the top with lots of yummy Baileys in it. When making the frosting, you’ll notice that the butter and Baileys don’t exactly blend well at first but don’t worry.Once you add in the powdered sugar, it will become really nice and fluffy.
Make sure your brownies are completely cooled before adding the frosting or the butter will melt.

The ganache is deliciously rich and chocolatey with a boozy Baileys flavor. I find you can definitely taste the Baileys in the ganache. You’re going to heat the Baileys just until it boils and then pour it over the chocolate and let it sit for a few minutes.
Once you stir, you’ll get a luscious and rich ganache which tops these brownies perfectly. (This ganache is amazing to top any kind of dessert!).

I always allow my ganache to cool at room temperature for about 30 minutes before refrigerating to help keep that nice shiny finish. Once completely cooled, you’ll want to store these tightly covered in the fridge.
These Baileys brownies are very rich so we always cut them pretty small. Store tightly sealed in the refrigerator up to 1 week.

Peanut Butter Chocolate Chip Cookie Bars

Ingredients
Brownies
- 1 Boxed Fudge Brownie Mix 9x13 size plus box indicated ingredients or your favorite homemade brownies
Baileys Frosting
- ¾ cup unsalted butter , softened
- ⅓ cup Baileys Irish Cream
- 3 cups powdered sugar
Baileys Ganache
- ¾ cup semi-sweet chocolate chips
- 2 tablespoons heavy whipping cream
- ½ cup Baileys Irish Cream
Instructions
- Prepare brownies according to package directions. Cool completely.
Baileys Frosting
- Beat butter on medium speed until fluffy. Add in Baileys and mix well.
- Add powdered sugar a little at a time until completely incorporated. Beat until soft and fluffy.
- Spread over brownies and refrigerate while making the Baileys ganache.
Ganache
- Combine Baileys and heavy cream in a sauce pan over medium high heat. Bring just to a boil and immediately pour over chocolate chips. Let sit 5 minutes without stirring.
- Whisk until smooth and spread over frosted brownies. Let sit at room temperature about 30 minutes. Refrigerate until set.

I work in grammes, so three cups of powdered sugar (icing sugar) works out to just over a kilo??..is that correct?

Can these be frozen for a few days? They would be perfect for an event I’m going to next weekend,.. but only have time to cook today. (The event is 7 days away)

Yes, the brownies and the frosting can be frozen. Because these are for an event, I would suggest preparing the ganache layer once defrosted. That step is really quick and will keep the top looking pretty. :)
I can’t find Baileys at any store in my area. I looked on Amazon and they have several products that say Baileys but none that look like that bottle. Do you know of anything else that would work?
Amaretto liquor tastes very good too, but the flavor is very strong. You may want to use less of it.

I have only made this as written but you could certainly leave out the baileys and add a little bit of milk and vanilla extract (or your favorite flavor) to the frosting.

Did you use a box or homemade mix? I used a box mix and the 13×9 pan and my cooked brownies are about half the height in the pan as yours look in the video.

I think that would work perfectly! The ganache may need to be more of a drizzle than a coating.

Is it too much to use Bailey’s in the brownies also in place of the liquid?
The flavor would probably be too strong, and it could off set the balance of the texture.
I have substituted kahlua for liquid in other brownie recipes….what goes better with baileys than kahlua, lol
Not at all. I did baileys instead of water in the brownie mix but you may have to bake a little longer.
Why not give us a recipe for brownies, instead of using premade brownie mix?

Is this recipe ok for children to eat? Does the alcohol get baked off or will it have an effect on small kids?
The alcohol is not baked so I wouldn’t recommend this recipe for children.
So the middle layer is just butter, bailey’s and powdered sugar…why not make it a stable whipped cream instead..use marsapone cheese, bailey’s, whipping cream and powdered sugar. Just a suggestion for improvement.
It’s more like a frosting than a filling but you could certainly try it that way. :)
