If you’re anything like us, your weekend mornings are spent in pajamas with cups of coffee and mucho laziness… whipping up these pancakes is the perfect fit for those lazy mornings!

Simple and quick… and perfectly fluffy.  Stacked tall with cold butter and real maple syrup (and crispy bacon). It’s almost the only reason to get out of bed on a Saturday!

How to Make Pancake Mix for Homemade Pancakes

Homemade Pancakes don’t take many ingredients.  You’ll simply take some dry ingredients and combine them with butter, eggs and milk… voila, pancakes.

Making a homemade pancake mix just means keeping the right ratios of dry ingredients ready to go. You’ll simply scoop some mix, add some wet ingredients and you’re on your way to fluffy pancake perfection in minutes.

Buying and preparing all of your own foods is the single easiest way to ensure that you know exactly what your family is eating.  It is also a great way to save money on groceries!  Most pre-made baking mixes are typically simply mixtures of very simple, common dry baking ingredients.  You can make your own cake, bread and other mixes and get delicious and cheap baked goods but, today, let’s discuss pancake mixes. This homemade pancake mix is easy to whip up and is a great way to save on the budget.

What Makes Pancakes Fluffy?

To make sure your homemade pancakes are perfectly fluffy here are a few of my fave tips:

  • Use fresh ingredients – Believe it or not, old ingredients can make your pancakes fall flat (especially baking powder).
  • Do not overmix – A few lumps are not only ok, they’re required!
  • Grease your pan with oil – You’ll want a well-greased pan and butter can burn.
  • Flip when bubbles pop – as soon as the bubbles pop, you ‘ll want to flip your pancakes.

Homemade Pancake Mix!

Ingredients  

Dry Pancake Mix

  • 4 cups all-purpose flour
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 tablespoons granulated sugar

To Make Pancakes

  • 1 cup pancake mix as shown above
  • 1 egg
  • 1 cup milk or as needed
  • 1 tablespoon melted unsalted butter or oil

Instructions 

Dry Pancake Mix

  • Combine all ingredients. (You can easily double or triple this part)
  • Store tightly sealed in a cool dry place.

To Make Pancakes

  • Preheat & lightly grease a griddle or pan over medium to high heat.
  • Combine 1 cup of pancake mix with egg, ½ cup milk & butter or oil. Add additional milk as needed, you may need up to 1 cup.
  • Pour ⅓ cup batter and cook until bubbles on the surface of the pancakes have popped (about 3-4 minutes). Flip and cook until the underside is light golden (another 1 – 2 minutes).

Notes

Each 1 cup of dry pancake mix will make approximately 5 pancakes.
Store dry pancake mix in an airtight container in a cool dry place for up to 3 months.

  1. this pancake mix is wonderful! I’ve made the mix itself multiple times and it always turns out great. Not sure why it’s runny for others-it’s actually thick for me and I sometimes have to add just a touch more liquid. I have always used buttermilk instead of milk so not sure if that’s the difference. I do have a question though: can I use this for waffles and if so, do I make them any different? Thanks again for a wonderful recipe.5 stars

    1. While this can certainly be cooked in a waffle iron it won’t provide the same texture that you would get with a traditional waffle recipe. Waffles are a bit more light on the inside and crisp on the outside, pancake batter tends to be more spongey. They’ll still taste great I’m sure!

  2. All I could taste was baked soda… I’ve never put baking soda in pancakes. Powder yes… soda no. Both ABSOLUTELY NOT its all you can taste. And it was very runny and the more you add to make it not runny, it taste more like baking soda! I’d use this recipe with out the baking soda.

  4. I don’t know what happened, but a cup of the pancake mix with a cup of milk and an egg made the mix so runny that I had crepes, not pancakes. I had to add at least a half cup flour and more baking powder. I know I measured it correctly because I have this one cup mixes all separated in individual Ziploc bags. Just took out another one to put sure it was a cup and it was. They tasted fine after that, which is why I gave three stars instead of one, but I don’t understand how everyone else didn’t get runny batter, as well, with the same measurements.3 stars

    1. Oh no, how disappointing. I can’t say for sure why this didn’t work out for you Colleen, we made this recipe again this morning and it seemed to be fine for us. You could certainly add a little bit extra pancake mix if needed.

  5. This recipe delivers basic, fluffy and lovely pancakes! Only addition I made was to add two teaspoons of vanilla. We set-up a “pancake bar” for my kids, with bowls of cut fruit and chocolate chips as toppings. A big hit! Thank you!!5 stars

  6. I should have read the comments first. I followed the recipe exactly and the batter was extremely runny. I had to add 1.5x the dry ingredients to get something resembling pancake mix.1 star

  8. I’d like to add buttermilk powder to the mix. How much would I add, and would I need to add more baking soda. Thanks!

    1. I’ve only tried the recipe as written. Maybe another reader has some ideas for you Victoria!

    2. I add 3 tablespoons buttermilk powder to mine for 2 cups of mix so I would go with 1.5 tbsp for 1 cup. Can’t see why you would need extra baking powder.

      1. Incredibly thin. Mixed twice, the second time with a second person in the room to ensure no mkstakes–same result. Dunno whats up, will add flour and call it a day.2 stars

      2. If you’re finding it too thin for your liking, you can add the milk a little bit at a time to reach desired consistency.

  11. Thank you for this recipe, this is AMAZING! We’ve tried other recipes, but this is by far our favorite. I’ve substituted regular milk for buttermilk. If we’re out of buttermilk, we make our own using this buttermilk.
