Simple and quick… and perfectly fluffy.  Stacked tall with cold butter and real maple syrup (and crispy bacon). It’s almost the only reason to get out of bed on a Saturday!

How to Make Pancake Mix for Homemade Pancakes

Homemade Pancakes don’t take many ingredients.  You’ll simply take some dry ingredients and combine them with butter, eggs and milk… voila, pancakes.

Making a homemade pancake mix just means keeping the right ratios of dry ingredients ready to go. You’ll simply scoop some mix, add some wet ingredients and you’re on your way to fluffy pancake perfection in minutes.

Buying and preparing all of your own foods is the single easiest way to ensure that you know exactly what your family is eating.  It is also a great way to save money on groceries!  Most pre-made baking mixes are typically simply mixtures of very simple, common dry baking ingredients.  You can make your own cake, bread and other mixes and get delicious and cheap baked goods but, today, let’s discuss pancake mixes. This homemade pancake mix is easy to whip up and is a great way to save on the budget.

What Makes Pancakes Fluffy?

To make sure your homemade pancakes are perfectly fluffy here are a few of my fave tips:

  • Use fresh ingredients – Believe it or not, old ingredients can make your pancakes fall flat (especially baking powder).
  • Do not overmix – A few lumps are not only ok, they’re required!
  • Grease your pan with oil – You’ll want a well-greased pan and butter can burn.
  • Flip when bubbles pop – as soon as the bubbles pop, you ‘ll want to flip your pancakes.

Homemade Pancake Mix!

Ingredients  

Dry Pancake Mix

  • 4 cups all-purpose flour
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 tablespoons granulated sugar

To Make Pancakes

  • 1 cup pancake mix as shown above
  • 1 egg
  • 1 cup milk or as needed
  • 1 tablespoon melted unsalted butter or oil

Instructions 

Dry Pancake Mix

  • Combine all ingredients. (You can easily double or triple this part)
  • Store tightly sealed in a cool dry place.

To Make Pancakes

  • Preheat & lightly grease a griddle or pan over medium to high heat.
  • Combine 1 cup of pancake mix with egg, ½ cup milk & butter or oil. Add additional milk as needed, you may need up to 1 cup.
  • Pour ⅓ cup batter and cook until bubbles on the surface of the pancakes have popped (about 3-4 minutes). Flip and cook until the underside is light golden (another 1 – 2 minutes).

Notes

Each 1 cup of dry pancake mix will make approximately 5 pancakes.
Store dry pancake mix in an airtight container in a cool dry place for up to 3 months.

  3. Tried this today and am so thankful for this find. I used buttermilk (1Tbls of white vinegar plus whole milk to make a full cup) and 1 tsp if pure vanilla. This batter was light and fluffy…so lovely. I can see it would hold up to adding blueberries, chocolate chips, or thinly slice bananas as well since the pancake did not fall apart when I dipped it in syrup. I also live the easy economical benefit of knowing what I am feeding my family. Thanks so much for sharing.

      1. Hello Holly… Maybe I just don’t know what the heck I’m doing. Judging by all of the great comments I guess it’s just me. But when I put your mix together it was so thick that there’s no way it would’ve made a pancake so I added a whole bunch more milk in order for it to pour into the pan they cooked up beautifully and perfectly but tasted like flour.. Nobody in the family would eat more than two or three bites of a pancake.1 star

      2. Hi Gary, the recipe is for a dry pancake mix…then you take only one cup (recipe makes 4 cups of mix) of pancake mix and combine it with the milk and eggs to make pancakes. I hope that helps!

  5. The only reason I didn’t give 5 stars is because there is no way that 1 cup of
    Milk is enough for this recipe. It was way to thick to even think about pouring , I actually had to add like 3 cups of milk. I also added vanilla to mine . But as far as the pancake itself wow were they ever so fluffy!! My bf loved them, he doesn’t want me to buy pancake mix anymore he wants me to

    1. Hi Teresa, the one cup of milk is for only 1 cup of the pancake mix. The rest is intended to be stored in the pantry. But I am so happy you guys loved them!

    2. The recipe is to store most of the mix for later so you have a quick breakfast next time, it wasn’t intended that you use 1 cup of milk for all the dry ingredients.

I’m not the best in the kitchen so I mixed up a tsp for a TSBP since I’m used to reading ingredients being listed in descending order by weight–my bad! Might I suggest a minor change for folks that make silly mistakes like me:

    ** 3 tablespoons sugar (moved this so TBSP are together, followed by tsp) **
