Comfort Food – we all want and crave it from time to time. There is just something about cabbage that I can’t resist… and it’s even better when it’s served alongside sausage (like in my favorite Cabbage and Noodles dish or Roasted Sausage and Potatoes).

In addition to cabbage and sausage, these foil packets contain tender potatoes and onions all smothered in garlic buttery goodness for the perfect meal!

While these Cabbage and Sausage Foil Packets are scrumptious, they are also super easy to prep and are ready to put on the grill in under 15 minutes!

Not to mention, foil packets make clean up a total breeze since you can simply use the foil packet as it’s own serving plate, so no need for extra dishes!

MY FAVORITE TIP that makes these turn out perfect every time… is the way the potatoes are steamed right on the grill! The steam helps the flavours mingle together and cooks the veggies until they are perfectly tender.

The trick to steaming in foil is adding just enough liquid to steam without everything becoming soggy. Easy enough right!?

The problem with adding liquid to foil packets is that very often while sealing the packet, the liquid pours out. To remedy this, simply add an ice cube!

This provides the perfect amount of liquid and makes sealing up the packets super easy and leak free!

You can definitely use your favorite sausage to customize this recipe. I love farmer’s sausage or garlic sausage, both are delicious options (you just want to make sure it’s a pre-cooked/smoked sausage).

Feel free to toss in your favorite veggies or whatever you have on hand! If you choose to add mushrooms, you may want to omit the ice cube so there isn’t too much moisture.

These Cabbage and Sausage Foil Packets are great to make ahead of time and are ready to pop on the grill when you are! This is a super idea for busy weeknights or to take to the cottage or camping where preparation and clean time is at a premium!

Cabbage and Sausage Foil Packets

Ingredients  

  • 1 pound smoked sausage cut into 1-inch pieces, I use Polish sausage
  • ½ head green cabbage cut into ½-inch wedges
  • 20 small red potatoes or yellow quartered
  • 1 small onion sliced
  • garlic butter store bought or homemade
  • salt and pepper to taste
  • 4 ice cubes

Instructions 

  • Preheat your grill to 400°F.
  • Cut four 18 x 12 inch sheets of foil. Spray well with non-stick spray.
  • Divide the cabbage, potatoes and onion over the foil sheets.
  • Add 1 ice cube to each mound.
  • Evenly divide the sausage between the packets and top with garlic butter (1-2 tablespoons per packet), salt and pepper.
  • Seal each packet well and place on grill.
  • Grill for 50 minutes flipping from the packets every 15 minutes.
  • Allow to rest 10 minutes before serving.
  • Serve with sour cream if desired.

These can be baked in the oven at 425°F for 35-40 minutes or until potatoes are fork tender. Potatoes sizes can vary, you’ll want just over 1 cup diced/cubed potato per serving. If you are concerned that your foil may leak, double wrap your packets.

  1. I didn’t have cabbage, but had a jar of sauerkraut with caraway. Used bacon fat to grease the foil, then put a 1/2 cup of drained but not rinsed kraut, and other ingredients in packet, plus added some carrots and baby portobellos I wanted to use up. With the kraut and mushrooms I didn’t need the ice cubes. I cooked mine in oven for 1hr 15mins at 425 degrees. Will be making this again. Was thinking of trying it with a potato cheese pierogi instead of potatoes (probably put it in frozen).

  2. Made this for dinner last night. My husband is not a lover of cabbage, but loves Polish sausage. He loved, loved this dish! Said this recipe was a keeper. We enjoyed this so very much. But, rather than make four packets, I made two and we shared one. The other went into the fridge for another day.

  5. This was delicious! I made my own garlic butter with butter, garlic powder, and Trader Joe’s Aoli Garlic Mustard Sauce to make 4 T total (1 T per packet ) baked in oven 35 minutes at 400 degree. The foil packets kept it all moist. Will do again on the grill another day.4 stars

    1. I have only made this as written so I can’t say for sure. You’ll just want to be sure your cabbage is softened and your sausage is heated through.

  6. So anxious to try this next Sunday after church. I will probably add corn as suggested in other reviews but also sliced fresh jalapeños. Since I see backing time is only 35 minutes @ 425 …I guess I’ll bake at 300 for about 1:45 since I am doing 12 packets, so it will be ready when I get home?????? What do you think of this timing ?

  8. We tried this last night. We did it in the oven. We bought an almost $12 coil of sausage/kielbassa for it and fresh cabbage. We didn’t enjoy it. We found the taste very boring and uneventful. Sadly, we will not likely make this one again.1 star

  9. This was so delicious that I fixed it 3 times in less than a week. And I have 2 foil packs in my freezer. I also cut up an ear of corn and added it to both.5 stars

  10. This sounds delish, could it be adapted for the Instant Pot? I don’t have a bbq grill and trying not to use oven since no working a/c. I am new to using the IP so not sure if this would even work there?

    1. If you’re making foil packets, you could certainly bake it in the oven (times are listed in the post). In the Instant Pot potatoes take about 5 minutes on high pressure. I haven’t tried packets but I think it would work if all of the ingredients were added to the IP and cooked on high for 6 minutes or so. If you do try it, please let us know how it works out for you!
