This Hamburger Soup is simple classic comfort food, hearty, healthy and satisfying. Perfect on a cool evening to warm your belly from the inside out.

I have to say that while we’ve always referred to this as hamburger soup, I know you guys have tons of other names for it! Hamburger soup, vegetable soup, hangover soup, poor man’s soup, bachelor’s stew… just to name a few.

How to Make Hamburger Soup

A rich tomato broth is filled with ground beef, tender potatoes and vegetables.  Sometimes the most simple ingredients make the best ever meals.

This hamburger soup is not only delicious, it’s easy to make with ingredients you likely have on hand.

I start with a mixture of lean beef, onion and garlic browned and drained.  You can use any kind of ground meat in this recipe including ground turkey.

Beef broth is the best broth option to add lots of great flavor; I personally prefer the low sodium variety.

I use a mixture of frozen vegetables to make this super easy (no chopping, no prepping) but it’s also a great way to use up any veggies in your fridge. Carrots, celery, peas, beans, zucchini… pretty much anything goes, sometimes we make this even with cabbage!

This version of Hamburger Soup uses potatoes since that’s how we always had it growing up. If you don’t have potatoes on hand (or just prefer pasta) you can add any type of pasta into this recipe!

I add an extra 1 cup of broth (or water) and let the pasta simmer until tender.  Macaroni, shells and rotini are favorites to make this into a delicious and hearty macaroni beef soup!

What to Serve with Hamburger Soup

While the soup is simmering, I prepare a quick chopped salad and slice up a loaf of french bread (almost always served with Homemade Garlic Butter) for a complete meal.

If you’re lucky enough to have leftovers, this soup is great reheated for lunches all week but even better, it freezes perfectly!

I prop up a freezer bag in my little baggie holder and fill each baggie with one serving.

When I need a quick lunch, I take it out of the freezer the night before or in the morning and microwave for a perfect meal. (And then sometimes add a little sprinkle of cheese before serving).

This is also an excellent gifting soup.

Ingredients  

  • 1 pound lean ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced
  • 3 ½ cups beef broth
  • 28 ounces canned diced tomatoes with juices, 1 can
  • 10.75 ounces condensed tomato soup 1 can
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 bay leaf
  • salt and black pepper to taste
  • 3 cups frozen mixed vegetables or fresh chopped vegetables

Instructions 

  • Brown onion, ground beef and garlic until no pink remains. Drain any fat.
  • Add potatoes, broth, tomatoes, tomato soup, Worcestershire sauce, seasoning and bay leaves. Simmer covered 10 minutes.
  • Stir in vegetables. Simmer 15-20 minutes or until potatoes are tender.

    this soup yesterday and I made it last night. I only tweeked one ingredient… instead of using regular diced tomatoes, I substituted a 28oz. can of original Rotel tomatoes and chilies️. You wouldn’t believe how delicious it made this soup… kicked it up a notch but it is not too hot… just enough to give you a little tingle in your mouth. I almost forgot… I did add 2tbsp.of sugar to tone down the acidity of the tomatoes. Try it, I think you’ll love it!!! Thanks for the recipe!♥️

  2. I didn’t have beef broth but I had dried beefy onion Lipton soup dried so added that with water and it was delicious plus frozen veggies I had from our garden and canned tomatoes we canned.

  3. Not bad, but a little bland. Add an additional two tablespoons of worchestershire sauce, 2 beef Boulton cubes, 15 ounces spring water (to adjust for evaporation), teaspoon of paprika and 1/2 to full depending on taste of chilli powder. Bring to full boil 30 minutes to 45 for potatoes. Use frozen mixed vegetables for best results. Cook time needs to be 1 1/2 hours for flavor to absorb and feel free to add another bay leaf.

    1. Also recommend sweating onions a little in extra Virginia olive oil with garlic before adding hamburger meat. only because had on hand lean 93 percent ground sirlion.

    1. Hi Jennifer, if using pasta noodles you will want to increase the broth as the noodles will absorb the liquid. Any noodle should be just fine! If you try it I would love to hear how it turns out!

    2. I always add noodles and it’s perfect. I keep the potatoes in though so it should still be good. I just add the noodles when I add the mixed vegetables so they don’t get too soggy.

  7. My husband loves this soup and he doesn’t like a whole lot of things. I substituted 1/2 can of tomato paste for the tomato soup and swapped chicken broth for the beef broth (mother’s allergic) and increased chicken broth to 4 and one half cups. it was a complete hit at my house.   8. Does the tomato soup absolutely need to be included? I have a gluten allergy and most condensed tomato soups have gluten containing ingredients…

    1. I have only tried the recipe as written Jackie. But other readers have tried swapping it out for V8 or crushed tomatoes with great success. If you try it I would love to hear how it turns out!

  9. Made this the regular way and plant based and both are really good! Had to add a little sugar both times, my husband is not a fan of highly acid soups; but it didn’t take away from the flavor, just toned done the tomatoes.

    Great for this time of the year! Made some cornbread on the side and we had a cozy and filling meal.4 stars
