  • Just a handful of ingredients (most of which you likely have on hand) make this recipe so easy.
  • This turns inexpensive chops into a melt-in-your-mouth meal with fork-tender perfection and a rich gravy.
  • If you’ve got pork chops, you likely have the remaining ingredients on hand.
  • Very little prep and simple steps make this a recipe for every day and any day.
  • Great over rice, mashed potatoes, or any kind of noodles (my favorite is to serve over elbow noodles).

Ingredients

Pork Chops – When cooking crockpot pork chops you want to choose thicker bone in chops. Look for chops that are well marbled with a bit of fat throughout. Leaner cuts will not be as tender. The best pork chops for the crock pot include blade chop, shoulder chop, sirloin chop, or tenderloin chops.

Sauce Ingredients – This recipe makes an easy mushroom gravy sauce.

  • Condensed Soup – We use condensed soup in this recipe because it holds up well in a crock pot. Fresh dairy can curdle or separate if cooked too long in a slow cooker.
  • Broth – Regular or low sodium beef broth or stock is the base of the brown gravy. Chicken broth can be substituted but the flavor isn’t quite as rich.
  • Onions & Mushrooms – Sliced onions and mushrooms add flavor. Use white or brown (cremini) mushrooms, I find brown mushrooms have more flavor. Even canned mushrooms work in a pinch.

Variations include swapping out the seasonings and adding a packet of ranch seasoning.

How to Make Crock Pot Pork Chops

It will taste like you’ve been hovering over the stove all day long, but this is really the easiest pork chop recipe.

  1. Sprinkle seasoning over the chops and brown in a skillet. Remove from pan and deglaze the pan with broth and soup, per the recipe below.
  2. Place mushrooms and onions in the bottom of a slow cooker & place pork chops on top.
  3. Pour the sauce mixture over and cover. Cook until tender.

Serve over mashed potatoes or egg noodles.

Tips for Tender Slow Cooker Pork Chops

  • The most tender results come from a bone-in thicker (approx. 3/4″) chop with nice marbling throughout.
  • For best results, choose thick cut pork chops that have fat and great marbling! Look for a blade chop, shoulder chop, or sirloin chop. Personal favorite is a shoulder chop. Boneless pork chops work too, just ensure they have nice marbling.
  • Meat that is very lean doesn’t work well in this recipe as it won’t give the same tender results.
  • Cook the chops low and slow allowing the fats to melt into the meat creating a tender juicy result!
  • If the chops aren’t tender (and you’ve used one of the recommended types) they likely need more time.

Got Leftovers?

Keep leftover Crockpot pork chops in a covered container in the refrigerator for up to 3 days. Reheat portions over the stovetop and add a little milk or cream to thin out the sauce.

Leftovers make great freezer meals.

Crock Pot Pork Chops (with gravy)

Ingredients  

  • 4 bone in pork chops about 3 pounds
  • salt and black pepper to taste
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil
  • 10.5 ounces condensed cream of mushroom soup 1 can
  • 10.5 ounces condensed cream of chicken soup 1 can
  • ¾ cup reduced sodium beef broth
  • 2 cups sliced mushrooms
  • 1 small onion sliced

Instructions 

  • Preheat oil over medium-high heat. Season pork with salt, pepper, paprika and garlic powder. Brown pork on each side (about 3 minutes each side).
  • Remove pork, add soup and broth to the pan and whisk to release any brown bits in the bottom.
  • Place mushrooms and onions in the bottom of the slow cooker. Top with pork and pour the soup mixture over the top.
  • Cook on low for 7-8 hours or until pork is tender. Thicken sauce with a slurry (see notes) if desired. Serve over rice, potatoes or noodles.

*The best pork chops for this recipe include blade chop, shoulder chop, sirloin chop, or tenderloin chops. Leaner cuts do work but the results are not as tender.
Use the canned soups directly from the can, do not add milk or water. Any type of "cream of" soup will work, the combination in the recipe is our favorite.
If your pork chops are not tender they likely need more time.
To make a cornstarch slurry combine 1 tablespoon each cornstarch and water. Whisk into the sauce in the slow cooker and let it thicken for about 5 minutes.

  1. I’ve cooked for many years and have eaten out at many restaurants. Pork chops are one of those dishes that is very hard to get right. They’re either too dry, too tough or have no taste, so I avoid fixing for company and fix one of my other “go-to” recipes that I know will knock it out of the park. Well, let me tell you…now THIS recipe falls into the “go-to” category too! I fixed it last night when we had company over at the house and they couldn’t get enough! It was fabulous! The seasoning was perfect, the pork literally fell off the bone and there was plenty of gravy to go around. Problem? NO leftovers! So now, I’ll be fixing it again at the end of the week when we have more company coming over!! Thank you SO much for this!5 stars

    1. I would love to know what kind if pork chops you bought and if you followed recipe exactly. I buy different chops and they always are so tough and dry…I cook them slow or fast. I’m going to try this recipe, my husband loves pork chops but here lately they end up in the garbage. Any advice would be greatly appreciated.

  2. This was the first recipe of yours I made. I have normally shied away from cooking pork chops in the crockpot because they’ve turned out dry. I made this recipe yesterday and it was SO GOOD! The chops were moist and tender and the sauce was delicious. I served it over buttered noodles along side fresh green beans, and it was terrific!     I found some nice meaty bone in Country Style Ribs. Do you think they would work for this recipe.

    1. I haven’t tried this with country style ribs but I do think it would work. Country style ribs tend to be more fatty so you might have a bit more fat in the gravy.

  5. I’m currently making this dish, how come mine is a very light brown colour instead of this beautiful dark brown colour?

    1. Hi Heather, it could just be the ingredients used. You also want to make sure in step 2 to get the brown bits off the bottom of the pan before adding to the crockpot. Thickening it with a slurry at the end can also lighten the color slightly but it should still taste delicious.

  6. I did everything it says to do to make this,mine did not thicken up there was no sauce like the picture shows were did I go wrong?

  9. What a beautiful gravy! I will be making this on Saturday. I do not have a crockpot but do have a Dutch oven and a slow cooker feature on my air fryer. This recipe is what I imagine a recipe should look like! Excited to make this!5 stars

  10. Hi! I love this recipe, I have made it multiple times and is always a hit with family and friends. But I wonder, would it be possible to cook in high less hours?5 stars

    1. I have only tried the cooking time listed in the recipe, but I would say you should be able to cook on high for 3-4 hours. I would suggest browning the chops and deglazing the pan as per the recipe before adding everything to the crock pot. Let us know how it turns out for you!

  12. I like it, but don’t love it. I didn’t add salt, and I doubled the recipe. I also cooked it for 8-hrs since I used nearly 7-lbs of meat. The meat was falling apart too much, imo. Next time I may sear the meat longer and then only cook for 7-hrsin thr crock pot. I feel a flavor element is missing, but can’t place it. Maybe more onion and less mushrooms, or more garlic??4 stars

    1. Hi Robin, I have not tried cutting this recipe in half but I think it should work well! Keep in mind though, you might have to adjust the cooking time.
