Chicken Tortellini Soup
Ingredients
- 1 tablespoon olive oil
- ½ onion chopped
- 1 pound boneless skinless chicken breasts cut into bite sized pieces
- 1 carrot chopped
- 1 rib celery chopped
- 1 teaspoon Italian seasoning
- 1 can canned diced tomatoes 14 oz, with juices
- 6 cups chicken broth
- 12 oz refrigerated cheese tortellini
- 2 cups chopped fresh spinach or kale, lightly packed
- 1 bay leaf
- shredded Parmesan cheese for serving
Instructions
- Season chicken with salt & pepper.
- In a large dutch oven, cook onion and chicken until browned (chicken does not need to be cooked through).
- Add seasonings, chicken broth, tomatoes, carrots, celery, and bay leaf. Simmer 10 minutes.
- Remove the bay leaf. Stir in tortellini and spinach, simmer an additional 7 minutes or until tortellini is tender.
- Garnish with parmesan cheese if desired.

Can you use frozen tortellini?
I haven’t tried it so I can’t say for sure Connie, but it should work just fine. In step 4, continue cooking the tortellini until it is tender. If you try it I would love to hear how it turns out!
How many hours do you put this in slow cooker crockpot

Hi Holly, we haven’t tried this recipe in the slow cooker but I would recommend cooking it on LOW for 6-8 hours, or HIGH for 3-4 hours to ensure the chicken pieces are fully cooked, and adding in the tortellini towards the final 20 minutes or so of cooking.
Can I make this in the slow cooker?
The soup itself can be cooked in the slow cooker. I would suggest adding the tortellini for the last 20 minutes or cooking it separately and adding it to each bowl as you serve.
