Salsa chicken one of the easiest (and yummiest) chicken recipes when time, energy, and ingredients are short!

Simply season the chicken and top it with salsa (any kind!) and some cheese. Ready in just over 30 mins, it is a great weeknight meal that the whole family will love!

Super flavorful, super easy, and super versatile— what’s not to love? Just season, top, and bake!

A package of chicken breasts, a jar or two of salsa and some cheese, and dinner is ready. This really is a one-size-fits-all recipe!

Ingredients

1. CHICKEN
This recipe calls for chicken breasts but boneless thighs will work.

2. SEASONING
Premade or homemade taco seasoning. You can increase the heat by tossing in some cayenne or even chipotle powder.

3. SALSA
Any salsa you use will bake into the chicken making it super juicy! Try pineapple salsa for a sweet and spicy twist. Top with salsa verde for an extra kick.

4. CHEESE
Top with Monterey Jack or pepper jack for some extra spice or cheddar cheese for a classic extra cheesy version!

How to Make Salsa Chicken

It’s as easy as 1-2-3 to pull this off (don’t worry, we won’t tell).

  1. Toss chicken in taco seasoning (I prefer homemade).
  2. Top with salsa (any kind).
  3. Bake (per recipe below), sprinkle with cheese, and broil until melted and bubbly!

Serving Suggestions

  • add your favorite toppings
  • serve with a veggie on the side and some rice
  • slice and serve with tortillas taco style (this is a great way to stretch it to feed a crowd)
  • add rice and beans and roll it into burritos
  • serve leftovers over nachos or as a taco salad for lunch

This easy juicy chicken recipe is the perfect weeknight meal!

Ingredients  

  • 4 boneless skinless chicken breasts 5-6 ounces each
  • 2 tablespoons taco seasoning
  • 2 cups salsa any kind
  • 1 cup shredded cheddar cheese or Monterey jack

Instructions 

  • Preheat oven to 375°F.
  • Toss chicken breasts with taco seasoning.
  • Top each chicken breast with salsa.
  • Bake 25-30 minutes or until chicken reaches 165°F.
  • Top with cheese and broil 1-2 minutes.
  • Optional: Add your favorite taco toppings as desired.

Notes

Adjust the heat by changing out the salsa, try hot, medium, or mild!
Shred leftovers for tacos, burritos, or salads

Used boneless skinless chicken thighs as that is what I had on hand. sprinkled the chicken not only with taco seasoning, but with cumin & garlic powders. once the salsa was poured on added fresh chopped cilantro leaves. Served with a side of Spanish rice, guacamole, chopped tomatoes & red onions. So easy yet delicious. Also this is an awesome recipe as the ingredients are always on hand. Great keeper recipe.

  6. Updated review: After seasoning the chicken breasts with taco seasoning, I cook mine in the crockpot all day on low setting. When the chicken is done, I shred it and serve it with sauce over brown rice. Raves all around!5 stars

  9. Your final picture shows a thick, dark red sauce. Is this something you added? Also what kind of salsa did you use? I can’t wait to make this! I love every recipe I’ve made from you.

    1. The salsa thickens and darkens a bit as it cooks. I used only chicken, taco seasoning, and salsa. I used Pace Picante as it was what I had on hand but any brand of salsa will work just fine in this recipe. (I topped it with cheese, tomato and green onion).

  10. I made this by baking frozen chicken breasts and your homemade taco seasoning mix in the salsa at 350° F for 2 1/2 hours. I cut up the chicken into small pieces and served it with the sauce over brown rice. Yummy!!! It is really good with and without cheese. Next time I may try making this in the crock pot.
