Why Strawberry Cheesecake Is Best as a No Bake
Fresh strawberries (and peaches) are one of my favorite parts of summer. Berries are my go-to snack year round but even more so in the summer when they’re in season and fresh & ripe.
When I have dessert it’s most often cheesecake (chocolate is my second choice). I love a good rich easy cheesecake recipe and this definitely fits the bill! To make it even better, this recipe is completely no bake and delicious (I think I’ve made it about a million times).
I’ve made both baked strawberry cheesecake and strawberry cheesecake cupcakes but this is even easier because no oven is required. Any recipe that doesn’t require baking yet can produce such a rich flavorful dessert is a double thumbs up in my book. Since the strawberries aren’t baked, you can taste the fresh and juicy flavor of summer.
How to Make Glaze for Strawberries
Once you learn how to make a glaze for fresh strawberries, you’ll not only put it on cheesecake, you’ll add it to cakes and puddings too!
Glazed strawberries are versatile (and you can add other berries into this mixture if you’d like) and they’re perfect to top trifles, parfaits and on top of my Strawberries & Cream Pie. I love the sweetness of a sauce or glaze but I also enjoy being able to taste the fresh flavor of summer strawberries in this dessert.
Not only that but adding in the glaze makes this dessert SO pretty, the berries just glisten and shine!

Strawberry Cheesecake Pie (No Bake)
Ingredients
- 1 graham cracker crust
- 8 ounces cream cheese
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- ¼ cup granulated sugar
- ½ cup heavy whipping cream
STRAWBERRY TOPPING
- 4 cups strawberries washed & halved
- ¼ cup granulated sugar
- ½ cup water
- 1 tablespoon fresh lemon juice
- 3 tablespoons strawberry Jell-O
- 2 tablespoons cornstarch
Instructions
- In a large bowl mix cream cheese, lemon juice, lemon zest and sugar until fluffy.
- In a medium bowl beat heavy cream until stiff peaks form. Fold whipped cream into the cream cheese mixture and spread in a graham crust. Refrigerate 2 hours.
- In a small saucepan combine all topping ingredients except strawberries. Bring to a boil over medium heat and let bubble 1 minute. Pour over strawberries and toss to coat. Arrange strawberries over cream cheese and refrigerate at least 4 hours.

Is there a substitute for the jello? Perhaps clear gelatin or more cornstarch?

Have been making this since 2018 (see older comment). I have made it both with and without the strawberry glaze and it is fantastic!
When I make it in a 9x13x2 pan, I quadruple (4x) the cheesecake part so it is nice and thick, and if I want the strawberries I just double the ingredients.
This is such a great recipe and tastes wonderful! I’ve had so many complements and people asking for the recipe. Making this tonight so we can have it for my husband’s birthday tomorrow (his request). Thank you for this wonderful recipe!

I’ve been trying to make the whipped heavy cream and I’ve been beating it for 20 minutes by hand and all I got from it was a frothy liquid. It’s not old and I had the heavy cream in the fridge to make sure it was cold. I am not an experienced cook so I don’t know what I’m doing wrong.
Oh no, that’s disappointing! What is the MF% of your cream (you want the cream to be at least 30% MF or more)? You can find more tips for whipped cream here.
Running a lemon back and forth against a zester can create a blizzard of zest and spray. Instead, drag the zester across the rind, following the curve, as if you’re shaving the lemon. The zest will collect neatly on the underside. When a recipe calls for zest and juice, zest first; squeezed fruits lose shape and are hard to grate.

Would this work with frozen strawberries?
Frozen strawberries can have a lot of liquid so I would suggest defrosting them and letting them drain well before using them.
Husband and I LOVED this pie. The cheesecake part is so light and fluffy. The lemon really adds great flavor. It was quick and super easy to make. This will be my go to pie for the summer.

This was amazing! I’ve always wanted to learn to make a cheesecake but it always seemed so difficult until I tried this recipe. I just bought the graham cracker crust, and doubled up on the cheesecake measurements but kept the same measurements for the glaze and and it all fit perfectly in the crust. Was a big winner in my house.

Hi there, my daughter picked this recipe out as her birthday cake (pie) lol. I am wondering if it is possible to double it, and instead of using 2 round cake pans, just put it altogether in a 9X13X2 baking pan (I have a recipe for homemade graham cracker crust no bake so there’s no issue there).
