Broccoli Cheese Baked Potato

These broccoli cheese baked potatoes make a great main dish or side! This is such an easy and delicious meal made in the slow cooker.  If you like, you can add cooked chicken when you add in the sauce.  My kids gobbled these up!

Slow Cooker Broccoli Cheddar Baked Potatoes!

  • 6 Baked Potatoes
  • 2 cans Cream of Cheddar soup
  • 6 cups fresh broccoli cut into bite sized pieces
  • 2 tablespoons flour
  • 1/2 teaspoon dry mustard powder (optional)
  • pepper to taste
  • water
  • 1 1/2 cups shredded cheddar
Instructions
  1. Wash potatoes and place in the slow cooker. Turn on high for 4 hours or low for 7-8 hours.
  2. Combine soup, 1 can water, flour, mustard powder and pepper.
  3. During the last 30 minutes of cooking, add the broccoli and pour cheese soup sauce over top.
  4. Place potatoes and broccoli on plates, add cheese to remaining sauce in the bottom of the slow cooker and stir until melted. Pour on potatoes.

  1. Had some leftover chicken so I chopped it up and added it to step 2 of the instructions and followed the rest of the instructions from there. Put as much chicken as you want. Makes for a nice rounded out meal.

    I could also picture in my head other leftover meats such as leftover hamburger chopped up or even hot dogs, anything you really can think of. Most of the meats go well with cheddar, broccoli and potato. Makes for a cheap meal and you use up leftovers instead of throwing them out if no one eats them.

  2. how much water do i put in the slow cooker and do i wrapped the potatoes or do i just leave the skin on them

  3. I found the directions very confusing as to what is going in the crock pot, etc. You lost me on directions 2-4.
    If all that stuff goes in the crockpot I doubt the picture would look that nice when serving.
    Can you please help me out and clarify steps 2-4 as I really want to make this recipe ???

    OK I get #2.
    # 3 Add broccoli to the crock pot I assume? Pour cheese sauce over top????? What cheese sauce. Was cheese supposed to be mentioned in #2. Then #4 Add cheese to remaining sauce?

    • The photo you see is the same item that came out of my slow cooker. I opened the potato, put some of the broccoli in it and topped with the cheese sauce. :)

      Yes, #3 you add the broccoli to the slow cooker. The cheese soup makes the cheese sauce which you pour over top.

      #4. Once you’ve removed the potatoes and broccoli from the slow cooker, you will have sauce remaining in the bottom. Add shredded cheese into the remaining sauce in the slow cooker and stir it. Spoon this over your potatoes.
