The best blueberry waffles are rich and fluffy.

You can use fresh or frozen berries and add in your favorite extracts and flavors (lemon zest is a great addition).

It’s easy to mix things up and customize these blueberry waffles!

BERRIES Fresh blueberries are best but of course frozen work just fine. Blueberries can be added right from frozen, no need to thaw first.

BUTTERMILK Buttermilk gives these waffles a Belgian waffle touch and helps make them fluffy. If you don’t any, you can make a buttermilk substitute.

FLAVORINGS We love almond extract, but it’s ok to use vanilla or any other favorite flavor if desired. Try using the base recipe and mix in orange extract or even lemon zest instead!

How to Make Blueberry Waffles

Blueberry waffles are super easy to mix up, and they are ready in 1-2-3!

  1. Preheat waffle iron (I use this one with waffle plates).
  2. Beat egg whites until stiff peaks form.
  3. Mix wet ingredients with egg yolks. Combine with dry ingredients.
  4. Fold in beaten egg whites and blueberries.
  5. Grease waffle iron and fry according to recipe!

Favorite Sides

So many things are delicious with waffles. It’s not hard to serve up a grand buffet for brunch!

To Reheat

  • Freeze on a sheet pan and once frozen, place in a freezer bag.
  • Oven – Place frozen waffles on a cookie tray and heat at 350°F for 15 minutes.
  • Microwave – Cook on high 40-60 seconds (will vary based on the microwave).
  • Toaster – Plain waffles can be reheated in a toaster but if your blueberries are juicy, they can make a mess of your toaster.

Blueberry Waffles

These Blueberry Waffles are fluffy, flavorful, and full of blueberries. They're perfect for weekend breakfasts with the family!

Ingredients  

  • 1 ⅓ cup fresh blueberries
  • 2 cups all-purpose flour + 1 tablespoon
  • 2 tablespoons granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups buttermilk
  • 2 eggs separated
  • cup melted butter
  • ¼ teaspoon almond extract or 1 teaspoon vanilla extract

Instructions 

  • Preheat waffle iron according to manufacturer's directions. Toss blueberries with 1 tablespoon flour and set aside.
  • Combine dry ingredients in a medium bowl.
  • In a separate bowl, mix buttermilk, egg yolks, butter, and extract. Set aside.
  • Place egg whites in a stand mixer and beat on medium-high speed until stiff peaks form.
  • Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites. Fold in blueberries.
  • Grease waffle iron and drop batter, close the lid and cook 3-5 minutes or until golden.

Notes

Serving size will vary based on waffle iron. The nutritional information is for 1/8th of the recipe.

  1. hello! do i need to pre-sift the flour prior to measuring? or do i just scoop it into the measuring cup and level?

  2. made this for the first time. didn,t have buttermilk used milk plus lemon juice. frozen berries. not a waffle left. wanting more. eggs whites really made the difference.5 stars
