I’m a huge fan of no bake desserts and even more so when those desserts take just FIVE MINUTES to make! That’s right, just 5 minutes and 6 ingredients to whip up this amazingly delicious dessert! If you have a budding chef in your kitchen (like my 11 year old daughter), this recipe is perfect!  It’s so easy to make that even kids can put it together by themselves!

No only it is pretty but dessert tastes fabulous, similar to an ambrosia salad without coconut!  It is essential to use lemon juice in this recipe as it thickens the mixture.  If you substitute the lemon juice your pie won’t set up.

No Bake Rainbow Pie

I’m a huge fan of no bake desserts and even more so when those desserts take just FIVE MINUTES to make!
Prep Time 10 minutes
Total Time 10 minutes
Servings 8

Ingredients  

  • 1 graham pie crust
  • 1 can sweetened condensed milk
  • 6 tablespoons lemon juice approx. 2 whole lemons
  • 14 ounces crushed pineapple well drained
  • 1 cup whipped topping such as cool whip
  • 3 ½ cups fruit flavored mini marshmallows
  • extra whipped topping for garnish optional

Instructions 

  • In a bowl, whisk together condensed milk and lemon juice.
  • Fold in remaining ingredients. Heap filling into the pie crust and refrgerate 4 hours or overnight.

  2. I make something similar, no crust, no eagle milk, and no lemon juice. I have made it for about 40 yrs. It is great!

  4. I love some your recipes like the Rainbow pie but it calls for a Graham’s Pie crust which isn’t sold here in Australia – could a normal pie crust suffice?

    I give it a 3.5 out of 5.

    It set nicely, but the flavors didn’t pop. Couldn’t taste the fruity marshmallows. The only bite that had a punch to it, was when you got a pineapple.

    It was horrible, but it was bland.4 stars

    1. Folding in the ingredients means gently stirring with a spatula. You’ll want to turn from the bottom of your bowl to the top until all ingredients are gently incorporated.

  8. Do you know if you can use the bottled lemon juice? I have some left over from canning and am assuming it will be ok.

  9. You say you MUST use lemon but we have a lemon allergy in our family… we usually substitute lime for lemon in recipes… would this work?

    1. I haven’t tried it with lime so I can’t say for sure. While I’m sure the lime would still taste great, the lemon does set up the pie so I’m not sure how it will set. If you do try it, please let us know how it works for you!
