Grilled Pork Chops are perfect for a simple summer supper, they definitely take ‘the other white meat’ to a whole new tender juicy level! Tossed in a simple herb marinade these pork chops are delicious served next to a helping of your favorite rice pilaf or a light tossed salad!
Not only is this grilled pork chop marinade light and tangy and perfectly balanced, but the pork chop grill time is easy and fast!
How to Grill Pork Chops
The best grilled pork chops start with uniformly sized chops (I use boneless). Allow them to marinade for a little while, this not only adds flavor but helps to tenderize the meat. This recipe uses center cut chops which are very lean so ensure you don’t overcook them.
- If your chops are really thick, score the fat cap by adding 1/4″ slices. This will help keep it from curling up.
- Once preheated, brush a thin coating of oil on the barbecue grate.
- Grill each side of the pork chop until grill marks appear and the edges lightly browned.
As with pork tenderloin, it’s important that you don’t overcook the chops and to allow grilled pork chops rest a few minutes before slicing/serving.
How Long to Grill Pork Chops
I like boneless center cut chops for the ease of cooking and because they’re almost as lean as Grilled Chicken Breast. If you have thicker chops you’ll of course need a longer cook time while thinner chops need less time. It is totally safe (and delicious) to serve pork chops cooked to medium with a little bit of pink inside. This keeps them tender and juicy!
Always test the pork by inserting your meat thermometer into the thickest part of the meat, away from any bones. According to the Pork Checkoff, you want to make sure the thermometer reads 145°F. I remove the meat from the grill at about 142°F and keep an eye on it to ensure it reaches the optimal temperature.
Using medium-high heat:
- cook 1/2″ chops for 4-6 minutes per side
- cook 3/4″ chops for 5-7 minutes per side
- cook 1″ chops for 7-9 minutes per side
For grilled bone-in pork chops, the method is basically the same. A good sear outside (browned and a little crispy) and an internal temperature of a minimum of 145°F.
Tips for Grilling Pork:
- Marinate at least 2 hours, this both flavors and tenderizes.
- Or, try a pork chop brine to make them tender & juicy!
- Don’t press with a spatula, this will squeeze out juices!
- If the outside is cooking faster than the inside, move the chops away from the direct flame of the grill. Close the lid and cook a few more minutes.
- To make sure, the inside of the chops are cooked all the way test for doneness with a meat thermometer.

Grilled Pork Chops
- ½ lemon juiced
- ¼ cup olive oil
- 1 tablespoon soy sauce
- ½ teaspoon garlic powder
- ¼ teaspoon basil
- ¼ teaspoon oregano
- salt and pepper to taste
- 4-6 boneless loin chops ¾" thick
- Combine all marinade ingredients in a large freezer bag. Add pork chops and marinate at least 2 hours.
- Preheat grill to medium high.
- Grill pork 5-7 minutes per side or until temperature reaches 145°F. Do not overcook.
- Let pork rest on a plate 5 minutes before serving.
