If you’re anything like us, your weekend mornings are spent in pajamas with cups of coffee and mucho laziness… whipping up these pancakes is the perfect fit for those lazy mornings!

Homemade Pancakes are pretty much the perfect weekend food.

Simple and quick… and perfectly fluffy.  Stacked tall with cold butter and real maple syrup (and crispy bacon). It’s almost the only reason to get out of bed on a Saturday!

How to Make Pancake Mix for Homemade Pancakes

Homemade Pancakes don’t take many ingredients.  You’ll simply take some dry ingredients and combine them with butter, eggs and milk… voila, pancakes.

Making a homemade pancake mix just means keeping the right ratios of dry ingredients ready to go. You’ll simply scoop some mix, add some wet ingredients and you’re on your way to fluffy pancake perfection in minutes.

Buying and preparing all of your own foods is the single easiest way to ensure that you know exactly what your family is eating.  It is also a great way to save money on groceries!  Most pre-made baking mixes are typically simply mixtures of very simple, common dry baking ingredients.  You can make your own cake, bread and other mixes and get delicious and cheap baked goods but, today, let’s discuss pancake mixes. This homemade pancake mix is easy to whip up and is a great way to save on the budget.

What Makes Pancakes Fluffy?

To make sure your homemade pancakes are perfectly fluffy here are a few of my fave tips:

  • Use fresh ingredients – Believe it or not, old ingredients can make your pancakes fall flat (especially baking powder).
  • Do not overmix – A few lumps are not only ok, they’re required!
  • Grease your pan with oil – You’ll want a well-greased pan and butter can burn.
  • Flip when bubbles pop – as soon as the bubbles pop, you ‘ll want to flip your pancakes.

Homemade Pancake Mix!

Ingredients  

Dry Pancake Mix

  • 4 cups all-purpose flour
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 tablespoons granulated sugar

To Make Pancakes

  • 1 cup pancake mix as shown above
  • 1 egg
  • 1 cup milk or as needed
  • 1 tablespoon melted unsalted butter or oil

Instructions 

Dry Pancake Mix

  • Combine all ingredients. (You can easily double or triple this part)
  • Store tightly sealed in a cool dry place.

To Make Pancakes

  • Preheat & lightly grease a griddle or pan over medium to high heat.
  • Combine 1 cup of pancake mix with egg, ½ cup milk & butter or oil. Add additional milk as needed, you may need up to 1 cup.
  • Pour ⅓ cup batter and cook until bubbles on the surface of the pancakes have popped (about 3-4 minutes). Flip and cook until the underside is light golden (another 1 – 2 minutes).

Notes

Each 1 cup of dry pancake mix will make approximately 5 pancakes.
Store dry pancake mix in an airtight container in a cool dry place for up to 3 months.

  1. First I followed the recipe, made one pancake and tasted it. It was good, but missing flavor. I then added about a teaspoon to a teaspoon and a half of vanilla extract to the batter, made another pancake and….aaaaaaaaaah! Soooooo yummy!! It did the trick!! Its all about FLAVOR!!!!4 stars

    1. I have only made it with milk but I do think any liquid would likely work. If you make them with water, let us know how it goes!

      1. I normally just use a shop bought pancake mix but didnt have any. Googled and found this recipe. Was amazing – the pancakes were fluffy and kids loved it. I liked how i cld keep the mix for another time. Perfect!

    1. Sorry these didn’t work out for you. Was your batter runny? Perhaps less milk would help if you have remaining mix leftover.

    2. This recipe is a perfect foundation recipe. If you are used to lots of herbs and spices in your food you will have to add some spices. Just reading the recipe you can see there are nothing flavorful in the ingredient list. I dont use syrup so I modified the recipe by using 3 c. wheat flour and 1 c. white flour because in general white flour tastes incredibly bland to me. I also added 1 tsp pumpkin pie spice and 2 tsp brown sugar. This made the pancakes perfectly fluffy and flavorful. I usually double this recipe and store it in a gallon ziploc bag for my teenage girls. They love having this mix on hand and like to throw in fresh fruit.4 stars

  2. This was perfect!!! I used sprouted spelt flour and coconut sugar. I also added a 1/2 tsp vanilla. They were delicious!! Toward the end of the batter it was a little runny so I added some more of the mix and let it sit a minute or two- it was perfect.

  4. i want to make these for school mornings but would want to be able to make 1-2 pancakes with it. how much would i change the recipe of the pancakes? would i omit the eggs and butter? thankyou for sharing!!

    1. You would need the egg and butter to get the right consistency. I would suggest making it as directed. Cooked pancakes can be frozen or refrigerated and reheated in the microwave.

  5. I am a pancake lover. Having dry mix pre-made makes life so easy :) I used whole wheat flour and it turned out great. Also added a tsp vanilla to the wet mix.
    I thought the batter looked a bit runny but they turned out perfect. It does thicken as it sits too.
    I made smaller pancakes. 1 cup dry mix made 10 pancakes (using approx. 1/4 cup wet mix for each pancake)5 stars

    1. It is not working out for me, either. most of them break when I try to flip them, but they are definitely done on one side and I’ve tried my pan on high and on medium heat. They are also not looking very fluffy. hrmmm Having the mix part pre-done, does help save time, though.3 stars

      1. Hmm, that’s disappointing. I’ve made this several times with success so I can’t say for sure what went wrong. Was your soda/powder fairly fresh? Did you add the oil & egg?

  6. This recipe is very good! I have been wanting a change in my breakfeast for a while as i’ve been eating toast everyday. So i was happy to hear that i could make my own pancake mix which would save me a lot of time rather than making pancakes from scratch.   8. As with some other commentators, my batter was also too runny. I remade using 1/2 cup milk and lightly beat the egg before adding it to the mix. The pancakes turned out much better the second try. 

  9. So I am guessing that if you need to make more than 5 pancakes you just double all the ingredients? 2 eggs, 2 cups milk etc..

  10. My pancakes came out perfect. Airy and fluffy with just the right texture and consistency. Much better than the best store bought mix. Blend the ingredients properly and you can’t go wrong. Healthy and delicious. Many thanks.
