If you’re anything like us, your weekend mornings are spent in pajamas with cups of coffee and mucho laziness… whipping up these pancakes is the perfect fit for those lazy mornings!

Homemade Pancakes are pretty much the perfect weekend food.

Simple and quick… and perfectly fluffy.  Stacked tall with cold butter and real maple syrup (and crispy bacon). It’s almost the only reason to get out of bed on a Saturday!

How to Make Pancake Mix for Homemade Pancakes

Homemade Pancakes don’t take many ingredients.  You’ll simply take some dry ingredients and combine them with butter, eggs and milk… voila, pancakes.

Making a homemade pancake mix just means keeping the right ratios of dry ingredients ready to go. You’ll simply scoop some mix, add some wet ingredients and you’re on your way to fluffy pancake perfection in minutes.

Buying and preparing all of your own foods is the single easiest way to ensure that you know exactly what your family is eating.  It is also a great way to save money on groceries!  Most pre-made baking mixes are typically simply mixtures of very simple, common dry baking ingredients.  You can make your own cake, bread and other mixes and get delicious and cheap baked goods but, today, let’s discuss pancake mixes. This homemade pancake mix is easy to whip up and is a great way to save on the budget.

What Makes Pancakes Fluffy?

To make sure your homemade pancakes are perfectly fluffy here are a few of my fave tips:

  • Use fresh ingredients – Believe it or not, old ingredients can make your pancakes fall flat (especially baking powder).
  • Do not overmix – A few lumps are not only ok, they’re required!
  • Grease your pan with oil – You’ll want a well-greased pan and butter can burn.
  • Flip when bubbles pop – as soon as the bubbles pop, you ‘ll want to flip your pancakes.

Homemade Pancake Mix!

Ingredients  

Dry Pancake Mix

  • 4 cups all-purpose flour
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 tablespoons granulated sugar

To Make Pancakes

  • 1 cup pancake mix as shown above
  • 1 egg
  • 1 cup milk or as needed
  • 1 tablespoon melted unsalted butter or oil

Instructions 

Dry Pancake Mix

  • Combine all ingredients. (You can easily double or triple this part)
  • Store tightly sealed in a cool dry place.

To Make Pancakes

  • Preheat & lightly grease a griddle or pan over medium to high heat.
  • Combine 1 cup of pancake mix with egg, ½ cup milk & butter or oil. Add additional milk as needed, you may need up to 1 cup.
  • Pour ⅓ cup batter and cook until bubbles on the surface of the pancakes have popped (about 3-4 minutes). Flip and cook until the underside is light golden (another 1 – 2 minutes).

Notes

Each 1 cup of dry pancake mix will make approximately 5 pancakes.
Store dry pancake mix in an airtight container in a cool dry place for up to 3 months.

  1. I’ve had this pinned for a while & just made them this morning. Very good pancakes!! I dislike boxed mix because they can be rubbery around the edges, so I usually make it for my kids but don’t eat any. I ate more than them today. Thank you!!

  2. Just an idea for those folks who found the batter too runny. Sometimes if you let the batter sit for three or four minutes after you mix it up, it will get thicker. It gives the flour a chance to absorb the liquid.

  3. So I followed this recipe exactly and the batter is very runny. I even added more flour and it is still way to runny. Why is that?

    1. I’ve made this several times and never have had a problem with it being runny so I’m not sure why yours didn’t work out. Did you add 1 cup of pancake mix to 1 cup of milk and 1 egg? You could certainly try adding a little bit more of pancake mix.

  4. This was great!! For HIGH ALTITUDE adjustment I added: 1 more TBSP Flour, and 1/2 tsp baking soda and it turned out great.

  7. Can you substitute whole wheat flour for the all purpose and have it come out the same or do you need to adjust the other ingredients too?

    1. I have only tried the recipe as written. If you try it with whole wheat flour, we’d love to hear how it works for you!

    2. Did you ever try it with whole wheat flour? I am curious if it turned out. I am going to try it with whole wheat flour and the water and unsweetened applesauce combo instead of milk and egg.

      1. I haven’t tried it with whole wheat flour. As a general rule when subbing in whole wheat flour I mix it 50/50 to start and see how it works.

        If you try it, please let us know how it works out for you!

      2. I have made it with all whole wheat flour, no revisions and it turned out close to the same just not quite as fluffy? My kids didn’t like them as much of course so now I make with half regular flour, half whole wheat and they are great. Love this recipe!

    1. Hmm! I’ve made this many times and not had runny batter. If it’s runny for you, I’d recommend adding a little bit less milk to your pancakes (or adding a little bit more of the pancake mix) to thicken it up! Hope this helps!

If you don’t see it at your grocery try Walgreens or a natural food store.

  11. I was wondering if you can just add water to the homemade pancake mix. My stepson is allergic to eggs but loves pancakes so we usually buy the just add water kind of mix. Thanks

    1. While I haven’t tried it, I have read that you can substitute eggs in pancake mix with one of the following for each egg:
      ¼ cup applesauce
      ½ mashed banana
      ¼ cup yogurt

      If you do try it, I’d love to hear how it works for you because others may have the same question!

      1. My granddaughter also elegiac to eggs.so I made the pancakes with apple sauce instead of eggs and it came out very good .
