I have to say that while we’ve always referred to this as hamburger soup, I know you guys have tons of other names for it! Hamburger soup, vegetable soup, hangover soup, poor man’s soup, bachelor’s stew… just to name a few.
Regardless of what you call it, you’ll definitely want to make it!
How to Make Hamburger Soup
A rich tomato broth is filled with ground beef, tender potatoes and vegetables. Sometimes the most simple ingredients make the best ever meals.
This hamburger soup is not only delicious, it’s easy to make with ingredients you likely have on hand.
I start with a mixture of lean beef, onion and garlic browned and drained. You can use any kind of ground meat in this recipe including ground turkey.
Beef broth is the best broth option to add lots of great flavor; I personally prefer the low sodium variety.

Hamburger Soup with Vegetables
I use a mixture of frozen vegetables to make this super easy (no chopping, no prepping) but it’s also a great way to use up any veggies in your fridge. Carrots, celery, peas, beans, zucchini… pretty much anything goes, sometimes we make this even with cabbage!
This version of Hamburger Soup uses potatoes since that’s how we always had it growing up. If you don’t have potatoes on hand (or just prefer pasta) you can add any type of pasta into this recipe!
I add an extra 1 cup of broth (or water) and let the pasta simmer until tender. Macaroni, shells and rotini are favorites to make this into a delicious and hearty macaroni beef soup!

What to Serve with Hamburger Soup
While the soup is simmering, I prepare a quick chopped salad and slice up a loaf of french bread (almost always served with Homemade Garlic Butter) for a complete meal.
If you’re lucky enough to have leftovers, this soup is great reheated for lunches all week but even better, it freezes perfectly!
I prop up a freezer bag in my little baggie holder and fill each baggie with one serving.
When I need a quick lunch, I take it out of the freezer the night before or in the morning and microwave for a perfect meal. (And then sometimes add a little sprinkle of cheese before serving).

Ingredients
- 1 pound lean ground beef
- 1 onion diced
- 2 cloves garlic minced
- 2 medium potatoes peeled and diced
- 3 ½ cups beef broth
- 28 ounces canned diced tomatoes with juices, 1 can
- 10.75 ounces condensed tomato soup 1 can
- 2 teaspoons Worcestershire sauce
- 1 teaspoon Italian seasoning
- 1 bay leaf
- salt and black pepper to taste
- 3 cups frozen mixed vegetables or fresh chopped vegetables
Instructions
- Brown onion, ground beef and garlic until no pink remains. Drain any fat.
- Add potatoes, broth, tomatoes, tomato soup, Worcestershire sauce, seasoning and bay leaves. Simmer covered 10 minutes.
- Stir in vegetables. Simmer 15-20 minutes or until potatoes are tender.

When I make hamburg soup, I use diced tomatoes and V8 juice for the liquid. Delicious!

I cooked this yesterday for my family its a soup my mom use to make when I was growing up so it brought back a lot of memories. I used 28 ounces of cubed tomatoes with bell peppers in a can with the juices. I had no beef broth on hand but lipton beef onion soup mix was a great alternative in a pinch. 1 pouch with 4 cups of water. did not add any extra salt there is enough in the lipton mix. the veggies I used was a frozen blend of peas green beans lima beans carrots. bascilly I used what I had in the house and it turned out really good. in a day in a half the whole pot was eaten. this recipe will be a keeper thank you.
My family is gluten free…so I had to make a few switches…condensed tomato soup has gluten in it, so instead, I used some tomato juice and tomato paste and I used gluten free Worcestershire sauce…OMGoodness…this is so good!! I also used ground turkey I had in the fridge…everyone loved it! As with any recipe, I have to pay special attention to the ingredients of any canned or procesessed foods. This soup is great because it took very little to adjust to our dietary needs. Thanks!!

I accidentally got crushed tomatoes instead of diced tomatoes My baby is asleep and would rather not go back to the store if I can help it. Any thoughts on substituting the crushed for the diced??

It is exactly correct that this is a quick and easy meal. Other than that, there is nothing wowser dowser about it. The flavor is okay–I think kids would like it best because it is pretty bland. But it did go together quickly, and it was satisfying, which was nice after an afternoon of shopping! I did add shaved parmesan to the top which helped, and served it with garlic toast which went well.
A little bit of shaved parmesan or cheese would be great in this, thank you for sharing! You can certainly adjust the seasonings to your liking. :)
I add a small can of tomato paste instead of tomato soup. Makes it seem richer. I also add one large onion and half a bulb of garlic. Also, I put a few different spices, as well as a little bit of Cayenne Pepper to it to give it a little heat.
I make a version of this that has a little kick. I use a small can of tomatoes, but add a can of Rotel. It’s delicious!
My recipe is much like this but you gotta have onion. Just gotta.

In the hamburger soup you can also add a little Texas Pete hot sauce. I also use Vegall for the mixed vegetables.

I love this soup ! My dad would make it all the time for us when we were growing up. The only difference is he added a little barley…… which is very delicious. He also used just Oregano instead of Italian seasoning.

I made the Hamburger soup tonight but like others, I tried it with ground turkey. I didn’t know if I was supposed to use a small can of diced tomatoes or the larger (28oz?) size. I guess it doesn’t make too much difference except that it gives you more liquid and obviously more tomatoes. It seemed to make a huge pot, though, and you said it’d serve 8. If I figured it out right, it looks like one serving is about 3 cups. Is that about right, do you think? I just started weight watchers and I’m trying to portion it out and add up my points. I put in all the ingredients and came up with a point value based on this recipe serving 8. But I think a 3 cup serving is quite a bit. I can make it smaller and it’ll be even less points, but I was just curious if that is about the serving size you came up with. Thank you for sharing the recipes. I can’t wait to try some of the others.

I used a 28 oz can in this recipe (sorry about that, I’ve updated the post). It does make a large batch (approx 10-12 cups) which would make each serving about 1½ cups.
