This Hamburger Soup is simple classic comfort food, hearty, healthy and satisfying. Perfect on a cool evening to warm your belly from the inside out.

I have to say that while we’ve always referred to this as hamburger soup, I know you guys have tons of other names for it! Hamburger soup, vegetable soup, hangover soup, poor man’s soup, bachelor’s stew… just to name a few.

How to Make Hamburger Soup

A rich tomato broth is filled with ground beef, tender potatoes and vegetables.  Sometimes the most simple ingredients make the best ever meals.

This hamburger soup is not only delicious, it’s easy to make with ingredients you likely have on hand.

I start with a mixture of lean beef, onion and garlic browned and drained.  You can use any kind of ground meat in this recipe including ground turkey.

Beef broth is the best broth option to add lots of great flavor; I personally prefer the low sodium variety.

I use a mixture of frozen vegetables to make this super easy (no chopping, no prepping) but it’s also a great way to use up any veggies in your fridge. Carrots, celery, peas, beans, zucchini… pretty much anything goes, sometimes we make this even with cabbage!

This version of Hamburger Soup uses potatoes since that’s how we always had it growing up. If you don’t have potatoes on hand (or just prefer pasta) you can add any type of pasta into this recipe!

I add an extra 1 cup of broth (or water) and let the pasta simmer until tender.  Macaroni, shells and rotini are favorites to make this into a delicious and hearty macaroni beef soup!

What to Serve with Hamburger Soup

While the soup is simmering, I prepare a quick chopped salad and slice up a loaf of french bread (almost always served with Homemade Garlic Butter) for a complete meal.

If you’re lucky enough to have leftovers, this soup is great reheated for lunches all week but even better, it freezes perfectly!

I prop up a freezer bag in my little baggie holder and fill each baggie with one serving.

When I need a quick lunch, I take it out of the freezer the night before or in the morning and microwave for a perfect meal. (And then sometimes add a little sprinkle of cheese before serving).

Easy Hamburger Soup

Ingredients  

  • 1 pound lean ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced
  • 3 ½ cups beef broth
  • 28 ounces canned diced tomatoes with juices, 1 can
  • 10.75 ounces condensed tomato soup 1 can
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 bay leaf
  • salt and black pepper to taste
  • 3 cups frozen mixed vegetables or fresh chopped vegetables

Instructions 

  • Brown onion, ground beef and garlic until no pink remains. Drain any fat.
  • Add potatoes, broth, tomatoes, tomato soup, Worcestershire sauce, seasoning and bay leaves. Simmer covered 10 minutes.
  • Stir in vegetables. Simmer 15-20 minutes or until potatoes are tender.

  1. My mother used to make this. She used Hamburger when we had no stew beef left over from the steer they slaughters. It was always at the end of the steer when doing this.If reheating this do not used the potatoes that was in the soup. Pick them out…… they dont reheat well. i noticed that difference in the taste. And what ever you do …….do not add any salt to this until the last 15 minutes. The reason is the beef stock your using and the canned tomatoes. They have allot of salt in them. Just taste it and add as necessary.. I still have not found how to take the salt out of something that got over salted! LOL Its a good soup indeed. Dont over load it with a certain vegetable. My husband is famous for adding peas. I dont care for them unless they are fresh off the vine. After that I dont like the taste and I love almost everything. I am not a huge fan of adding rice to recipes either. Its a filler with no nutritional benefits what so ever. So do new potatoes if wanting potatoes if reheated….. no salt until you taste it about 15 minutes before serving…….. and stay away from rice if you can. I have eaten this for years…….and did wonder why my mother used to pic out the potatoes when reheating……….. It was always a 2 night meal and one of my favorites…….as long as it had beef of some sort in it.5 stars

    1. Vickie, I’ve heard that by putting a raw potato in soup it’ll draw the extra salt out. I don’t know for sure as I do not use much salt when cooking.

  3. My husband is allergic to tomatoes. What else can I use besides beef consomme to get a rich broth

    1. Used to make variations of this when I was in college in the early 90’s. Use what you have sort of recipe. I would make my own broth from reducing leftover bones (marrow is full of goodness my soup making great grandmother used to say), onions, mushrooms, seasonings etc. Not really all that difficult plus very cost effective being on a tight budget as most college kids are. It was also wonderful to dip a grilled cheese into. .5 stars

      1. Is there a substitute for the Worcester sauce?  I’ve never used it so if there’s a substitute you know of that would be great :) thank you 

      2. It adds a bit of a salty umami to this recipe. You could try a very small dash of soy sauce or just leave it out all together.

      3. You can use coconut aminos … it’s the perfect substitute … GF and Paleo friendly!

      4. Coconut Aminos is the perfect substitute for Worcestershire sauce.  Also best to use fresh veggies not frozen.  Personally not using  tomato soup as it is processed, so use a bit of tomato paste … watching carbs!   No rice or noodles or corn or beans in mine … using cauliflower, celery, zucchini, carrots, onion, mushrooms, green beans all fresh, no canned or frozen.  Personally do not like it after it’s been frozen – veggies are horrible, mushy  UGH … so make enough to get your thru a few days.  PS I also use ground turkey.   5. I made the hamburger soup with ground turkey , no stewed tomatoes
    Added chicken broth , tomatoe soup and bouillon so we will see

  6. I made the Hamburger Soup and it is addictive!!!! I make it once a week because I crave it so. I did not change the recipe. I just love this and I’ve never been one for veggie soup.
