This Hamburger Soup is simple classic comfort food, hearty, healthy and satisfying. Perfect on a cool evening to warm your belly from the inside out.

I have to say that while we’ve always referred to this as hamburger soup, I know you guys have tons of other names for it! Hamburger soup, vegetable soup, hangover soup, poor man’s soup, bachelor’s stew… just to name a few.

How to Make Hamburger Soup

A rich tomato broth is filled with ground beef, tender potatoes and vegetables.  Sometimes the most simple ingredients make the best ever meals.

This hamburger soup is not only delicious, it’s easy to make with ingredients you likely have on hand.

I start with a mixture of lean beef, onion and garlic browned and drained.  You can use any kind of ground meat in this recipe including ground turkey.

Beef broth is the best broth option to add lots of great flavor; I personally prefer the low sodium variety.

I use a mixture of frozen vegetables to make this super easy (no chopping, no prepping) but it’s also a great way to use up any veggies in your fridge. Carrots, celery, peas, beans, zucchini… pretty much anything goes, sometimes we make this even with cabbage!

This version of Hamburger Soup uses potatoes since that’s how we always had it growing up. If you don’t have potatoes on hand (or just prefer pasta) you can add any type of pasta into this recipe!

I add an extra 1 cup of broth (or water) and let the pasta simmer until tender.  Macaroni, shells and rotini are favorites to make this into a delicious and hearty macaroni beef soup!

What to Serve with Hamburger Soup

While the soup is simmering, I prepare a quick chopped salad and slice up a loaf of french bread (almost always served with Homemade Garlic Butter) for a complete meal.

If you’re lucky enough to have leftovers, this soup is great reheated for lunches all week but even better, it freezes perfectly!

I prop up a freezer bag in my little baggie holder and fill each baggie with one serving.

When I need a quick lunch, I take it out of the freezer the night before or in the morning and microwave for a perfect meal. (And then sometimes add a little sprinkle of cheese before serving).

This is also an excellent gifting soup.

Ingredients  

  • 1 pound lean ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced
  • 3 ½ cups beef broth
  • 28 ounces canned diced tomatoes with juices, 1 can
  • 10.75 ounces condensed tomato soup 1 can
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 bay leaf
  • salt and black pepper to taste
  • 3 cups frozen mixed vegetables or fresh chopped vegetables

Instructions 

  • Brown onion, ground beef and garlic until no pink remains. Drain any fat.
  • Add potatoes, broth, tomatoes, tomato soup, Worcestershire sauce, seasoning and bay leaves. Simmer covered 10 minutes.
  • Stir in vegetables. Simmer 15-20 minutes or until potatoes are tender.

      1. I also made this before but call it hamburger stew I use tomatoes veggies taters and add a big can of tomato juice along with tomato soup and onions makes a big ole pot for left overs and freezing4 stars

  1. As long as you use fresh, and no canned.
    Your diet should be good.
    In another note.
    Add more rice, and pinapples to your foods to eat.
    I have lost a lot of weight, and after I broke my ankle in 2014, both ankles have been swollen ever since. But since I have come to the Philippines my swelling is all gone. Plus my blood pressure is better than ever.
    The high protein of the rice has helped, and the cold showers.

    1. I have a lot of swelling in my ankles. I crushed my ankle in a car accident a few years ago. Tell me more about eating more rice and pineapple to help with swelling and weight loss.

    2. I love this…… I never have used potatos or sauce fillers in mine ALL NATURAL…. food!!!!!! It rocks! 

      1. Brown rice, which is the only kind to eat, never white, DOES contain protein, 5 grams in 1 cup of rice, however, it contains 45 grams of carbohydrate, and is considered a carb food, not a protein.

    3. That’s because rice has a lot of vitamin B6 and this vitamin is suppose to deflate you LOL :)
      B6 removes water build up, bloating, swollen, etc. It’s also good for your skin. You can start with at least 100 mg, and take as much 600 or perhaps more and it won’t hurt you, cause I did when I wanted to loose weight and make my skin healthier and then just 100 or 200 daily for maintenance :) Recipe very delicious , THANK YOU :)5 stars

    1. Tracking Cholesterol

      Have no more than 300 milligrams of cholesterol in your daily diet to keep your heart healthy, notes the publication “Dietary Guidelines for Americans, 2010.” Ground turkey is slightly higher in cholesterol than ground beef. You’ll get 105 milligrams of cholesterol from a 3 1/2-ounce broiled 85-percent-lean ground turkey patty. The same serving of ground beef that is also 85-percent-lean has 90 milligrams. Even if you have leaner ground turkey, the 93-percent-lean variety, the cholesterol content doesn’t change. But if you opt for leaner ground beef labeled as 95-percent-lean, you’ll cut your cholesterol down to about 75 milligrams per 3 1/2-ounce patty.

      1. If you use ground turkey breast, instead of the ground turkey, you will cut your cholesterol way down and fat content also.

  5. This soup is wonderful! Everybody loved it and my dad ate three bowls of it (which I’m taking as a compliment!) Next time, though, I’m going to do it with fresh veggies. The frozen were good, but it would have been so much more delicious with fresh! Thanks for posting this!

  6. I make a hamburger soup exactly like this. My potatoes after being frozen taste bad and the beans get mushy but everything else is ok

  7. I made this for dinner last night and it was SO good! Such a simple and delicious recipe. I just warmed some up for lunch today and it’s even better today! :)

    1. I would suggest browning the beef and adding it to the slow cooker along with the remaining ingredients. Cook on low 6-8 hours or until the potatoes are tender.

      1. I do this on Sundays and it works perfectly! I start everything in the crock pot before leaving for church – set it for 4 hours on low. When we return home it’s a no fuss, no mess kinda meal that’s absolutely delicious! We loved to add
        Mushrooms to ours as well! 

      2. I make it in the crock pot – brown the beef and 1/2 the onion chopped in a skillet. I place all the other ingredients except the potatoes or pasta in the crock pot and set it on high. I cook the potatoes (cut up) in the microwave. When the ingredients in the crock pot have boiled about an hour I add the meat. About 30 min. before the soup is done, I add the potatoes. I like to put a pkg of either onion soup mix or taco (low sodium kind) seasoning mix in the meat while it’s cooking sometimes just to give a different flavoring to the soup.

  8. I made this tonight. Made it with ground turkey and followed recipe for the remainder. Super easy and not time consuming at all. Family loved it … even my pickiest eater. Will definitely go in our rotation to make again. THANKS!
