Simple Ingredients, Big Flavor

  • Ham: I use a spiral cut ham since it’s easy to cut and serve, but any fully cooked ham will work. Choose an 8 to 10-pound ham to fit in a 6 to 7-quart CrockPot.
  • Preserves: Use either apricot preserves, apple jelly, or orange marmalade as the base of the glaze. Each brings a slightly different sweetness.
  • Brown Sugar: Brown sugar adds sweetness and helps caramelize the glaze. Use dark brown sugar for a rich flavor.
  • Flavor: Dijon mustard and a pinch of ginger add flavor, while cider vinegar balances sweetness.
  • Variation: Swap the glaze below for a brown sugar glaze, add in some maple syrup, or skip the glaze and use a raisin sauce instead.

Plan for plenty of leftovers and opt for the larger size of ham!

  • ¼ – ⅓ lb. per person if using a boneless ham
  • ⅓ – ½ lb. per person if using a bone-in ham

How to Make Crockpot Ham

  1. Make the glaze (full recipe below).
  2. Sprinkle brown sugar in the bottom of the slow cooker.
  3. Score the ham and glaze it.
  4. Add rosemary sprigs and cook.

Holly’s Tips for the Best Ham

  • No liquid needed: The ham will release juices as it cooks. You can add up to ½ cup of pineapple juice to the bottom of the slow cooker if you’d like!
  • Make your own glaze: For the best slow cooker ham recipe, discard the glaze packet that comes with your ham and follow the glaze recipe below.
  • Score the meat: If you’re not using a spiral-cut ham, score the top of the ham by running a knife diagonally about ⅛ inch deep, allowing the glaze to soak into the meat.
  • Use a thermometer: A smoked ham should be cooked to an internal temperature of 140°F, as measured by a meat thermometer. Remove it from the slow cooker at about 135°F, as the temperature will continue to rise as it rests.

Storing

Store leftover crockpot ham in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze portions in freezer bags or containers for up to 4 months. To reheat, let it thaw in the fridge overnight, then warm it covered in the oven or microwave.

Ingredients  

  • ¼ cup light brown sugar
  • 8 to 10 pound spiral ham fully cooked, see notes for other ham
  • 2 to 3 sprigs fresh rosemary optional

For the Glaze

  • ½ cup apricot preserves apple jelly, or orange marmalade
  • ½ cup light brown sugar packed
  • ¼ cup Dijon mustard
  • 3 tablespoons apple cider vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon ground ginger

Instructions 

  • For the glaze, in a small saucepan over medium heat, melt the preserves or jelly. Whisk in the brown sugar, Dijon mustard, vinegar, garlic powder, and ground ginger. Bring to a boil and let boil for 1 minute while stirring.
  • In the bottom of a 6 to 7-quart slow cooker, sprinkle ¼ cup of brown sugar.
  • If the ham has a plastic disk in the center, remove the disk and discard it. Place the ham on a large cutting board or baking sheet and use a knife to score the top* of the ham, ⅛-inch deep, in a criss-cross pattern.
  • Separate the layers of ham and brush some of the glaze into the layers. Place the ham into the slow cooker and pour the remaining glaze over the top.
  • Add rosemary sprigs if using, and cover the slow cooker (see notes if your ham is large). Cook on low for 4-5 hours or until the ham reaches 135℉.

Notes

Temp Check: Slow cookers can vary; check the ham early using an instant-read thermometer to ensure it doesn’t overcook.
Ham: Be sure to check your package to ensure that the ham is smoked/ fully cooked. The package will tell what temperature the ham needs to reach.
Score the ham: If your ham is not spiral cut, score the ham to allow the glaze to seep into the meat.
Substitution: Apple jelly can be substituted with apricot jam/jelly/preserves, apple butter, or orange marmalade.
Ham Size: If the ham is too large for the lid to close completely, cover the slow cooker with foil and place the lid on top of the foil to seal in the heat.
Leftovers: Keep leftovers in an airtight container in the refrigerator for 4 days and in the freezer for 4 months.

  1. This looks amazing! I bought an 18 lb ham and it will be way too big for a crock pot. Do you think this would work in an electric roaster? Any tips you can give would be greatly appreciated:)

    1. I haven’t tried it in a roaster but I can’t see why it wouldn’t work. My only concern is that the sugar may burn if there isn’t enough liquid so I would suggest keeping an eye on it and adding a little bit of water or broth if needed. Please let us know how it works out for you if you do try it!

  4. If I could only get a 4-5 lb ham, do you suggest I cook it for half the time, cook it on high, or just wait till it’s at temp? Thanks!

    1. I haven’t tried it that way but I’m sure it would work just fine. As the slow cooker will be less full, it may cook a little bit quicker so you might like to check it to ensure it stays moist.

  5. Do you think that adding carrots and green beans in with the ham would change the taste any? And, if not, at what point should I add them( I’m new to cooking)

    1. A regular (fully cooked) ham should work just fine. You might like to score slices in the skin to allow the flavor to get into the ham.

  6. What size crockpot do you use for a 10 lb ham? I have a 6 Qt & am wondering if this will be big enough. I’ll be trying this recipe this Friday to take to our Community Group & think I may need to use my electric roaster instead.

    1. Mine was closer to 8.5lbs and fit in my 6QT. It’s ok if it sticks out the top a little bit, just cover the slow cooker with foil to keep it sealed and place the lid on top of the foil.

  7. I was just wondering….would it be ok to reheat this ham in the crock pot….or would you suggest another method? I’ll be making it today or tomorrow….and out Thanksgiving is on Sunday. I meant Monday….sry.

      1. My ham was too big for my crockpot. I covered the top of my cp with foil but it doesn’t seal very well. I hope it turns out all right. Your directions said cover the cp with foil. Do you mean covering more than just the top? I’m sure it will be delish, I’m just a little concerned with the ham drying out. Thank you.

  9. I don’t usually comment when I find a recipe we love but I had to for this ham! Over the years I’ve tried many crockpot hams in an effort to make the holiday’s less stressful for myself. THIS HAM! It was everything ham should be. The flavor was amazing and everyone, including my very picky 9 year old, love it. Usually we end up freezing many of the leftovers because we just can stomach one more meal with ham but not this time! We finished every scrap of ham. I even found myself eating cold ham right from the fridge because it was that good!

  12. This sounds perfect for the upcoming Christmas dinner! So I take it the 1/2 cup brown sugar from the glaze is split. One quarter cup will go into the glaze, and one quarter will be sprinkled into the slow cooker? And from the photos, the sprigs of rosemary are for garnish?

    1. You will use a total of ¾ cup brown sugar.

      ¼ cup is sprinkled in the slow cooker (the first ingredient listed in the recipe).

      ½ cup is added to the glaze (listed under the glaze ingredients)

      1. I’m afraid I am missing something about the brown sugar because the 1/2 cup ingredient says (divided). Why does it say divided if the 1/4 cup ingredient to sprinkle into the bottom of pot is in addition to the 1/2 cup for the glaze. :-\
