Easy cheese sandwiches are rolled up, wrapped up in bacon, and then pan-fried (or air fried) to gooey, cheesy perfection. You can’t eat just one!

  • Prep ahead and refrigerate, cook just before serving.
  • Pan-frying or air-frying guarantees the bacon and bread get crispy without the cheese melting out.
  • Dip them or dunk them in ketchup, tomato soup, or your own favorite dips.

Ingredients for Bacon Roll Ups

Bread – Regular sandwich bread (white or wheat) is perfect for this recipe. Cut off the crusts (save them for bread crumbs) and roll up your favorite cheese.

Cheese – Choose your cheese! Use cheddar slices or really any kind of cheese you’d like. Soft cheeses like goat cheese and herbed cream cheese make grilled cheese roll-ups fancy as appetizers. Cut them in half diagonally and serve alone or with a dip.

Bacon –  The bacon should be partially cooked before wrapping the roll-ups. I find partially cooked raw bacon wraps easier than pre-cooked bacon but I use both interchangably in this recipe.

You can substitute other thinly sliced deli meat like ham, baloney, and sandwich-thin salami.

How to Make Cheesy Bacon Rolls

These are as easy to make as they are fun to eat!

  1. Roll slices of bread flat (per the recipe below).
  2. Place cheese on one slice and roll up. Wrap a slice of bacon around each roll and secure with a toothpick.
  3. Add to a pan with butter. Rub rolls in butter.
  4. Serve when crispy and browned.

Crispy Cheesy Bacon Rolls

Ingredients  

  • 8 slices white bread or wheat bread, crusts removed
  • 8 slices cheddar cheese or more to taste, or 1 cup+ grated cheddar
  • 8 slices bacon raw or pre-cooked
  • ¼ cup butter

Instructions 

  • If using raw bacon, partially cook it in the air fryer or in a frying pan over medium high heat until some of the fat has rendered out. Ensure the bacon is not cooked too crispy.
  • Cut the crusts off of the bread if desired. Use a rolling pin to roll the bread flat.
  • Place one slice of cheese (or more if you'd like) or 2-3 tablespoons shredded cheese on each slice.
  • Roll up the bread and cheese. Wrap one slice of bacon around each roll and secure with a toothpick on each end.
  • Place in a pan over medium-low heat. Add a small spoonful of butter & using tongs, rub the rolls in the butter ensuring the bread edges are covered.
  • Continue adding bits of butter and turning with tongs until all sides are browned and cheese is melted.
  • Serve immediately.

Notes

You can use cheese slices or real cheddar cheese in these roll ups with delicious results.
Precooked bacon works well for these rolls, partially cooked bacon is a bit easier to wrap as it stretches a little bit. 
To Cook Bacon Rolls in the Air Fryer
  1. Preheat the air fryer to 360°F.
  2. Place the rolls in the air fryer and cook 4-6 minutes or until the bacon is crisp and the cheese is melted.

  2. Could you use maybe a crescent roll and string cheese. Bake them instead of frying in butter? Do you think this would work?

      1. I would love to pre cook a hotdog browing it in the oven,then roll with the cheese on the bread.Roll it all up and wrap the bacon around then put in the oven.I do some

    1. I haven’t had to heat them (because we haven’t had leftovers ;) ). You could try heating them in the microwave on a paper towel lined plate (uncovered so the bacon can crisp a bit) or just toss them back into the frying pan.

  9. Sounds really good. However, it would be just the same as making a grilled cheese with bacon. Less hassle too.

I’ve made these for years, however I use soft (whipped) cream cheese with pineapple (you can use any flavor you’d like), or you could use any spreadable soft cheese such as pimento cheddar, or an herbed cheese. Don’t go too heavy or it will ooze out. After rolling the bread (i do cut crusts off but I don’t flatten bread, tho you could if you wanted to), I cut each log in half so you have 2 pieces. I then use raw bacon and wrap the bacon around the bread one time only and secure with toothpick. I put each wrapped roll on a broiler pan and broil till bacon is crispy then turn each roll with tongs and repeat till bacon is cooked all around, or a jelly roll pan (with sides) and bake at 375 degrees till bacon is crispy then turn each roll with tongs and repeat till bacon is cooked all around, or place the rolls on a foil pan on a grill till bacon is crispy then turn each roll with tongs and repeat till bacon is cooked all around. Very versatile cooking methods too! The original poster’s recipe is a good one (with the single cheese slice), but if you don’t want to use butter, use raw bacon, and an alternative cooking method as I’ve used. They are very forgiving, and people will beg for more so use an entire loaf of bread for a party (I always make 2 loaves)!

    2. I tried these with the cream cheese. I found that if i leave the roll ups in the oven ling enough for the bacon to get crispy it dries out the cream cheese. There was no flavor. I Need to try with a different kind of cheese.

    3. You are not serious Mari ! skip the butter but use raw bacon ….where do you think all the bacon fat goes ? absorbed by the bread !!!! healthy healthy ???????

      1. Did the recipe even mention the word HEALTHY??? If you don’t like Mari’s recipe then just move to the next one. No reason for you to be snarky or rude!

    1. I did try it without butter first but the edges of bread sticking out needed a little of the butter. I’d love to hear how it works with your croissant rolls!
