Most people are probably currently trying to behave themselves and stick to their New Year’s resolutions, but I am not one of them. So for those of you who are, I apologize in advance for tempting you with these chewy and delicious Peanut Butter Cornflakes No Bake Cookies.
Seriously, I know, it seems completely unfair of me to dangle such a recipe in front of you while you’re trying to be good, but these are just too good not to share! Like addictively good!

I’m a huge fan of no bake cookies, my mom made them all the time when we were growing up and I continue to make them in tons of different flavors today, like my Irish Cream No Bake Cookies or my Peanut Butter No Bake Cookies.
Traditionally, I make my no bake cookies with an oatmeal base, but for this recipe I decided to try something a little different, Corn Flakes! Not overly sweet, this boring breakfast cereal pairs with the creamy peanut butter to create a wonderfully sweet and salty cookie!

They’re also SUPER chewy and my husband loves them even more than the classics. In fact, I packaged most of the batch up for him to take into work and they never made it because he keeps stealing cookies out of the container and there’s no longer enough left to share!
This recipe is made with just 5 ingredients: peanut butter, corn flakes, sugar, corn syrup, and vanilla. They’re made right on the stove top and are ready in minutes, and I promise the whole family won’t be able to get enough of them!

Equipment
Ingredients
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 6 cups corn flakes
Instructions
- In a large saucepan, combine the sugar, corn syrup, and peanut butter. Cook over medium high heat until center starts to boil, make sure to stir constantly so the sugar doesn't burn.
- As soon as the sugar mixture comes to a boil, remove from heat and stir in the vanilla extract and corn flakes, mix until corn flakes are evenly coated in sugar mixture.
- Use an ice cream scoop to drop cookies onto parchment paper as quickly as possible before mixture starts to cool and harden.
- Let cool on the parchment paper for 20 to 30 minutes before enjoying.

This is recipe that my elementary school in the 1960’s that was my favorite treat to choose in school cafeteria. I have made these many years with corn flakes, special k, and tried with rice crispies. Special works great. Occasionally put a chocolate frosting on top. I love making these and really only recipe i have ever memorized. They ate addictive too
Very yummy, very easy! Step one really should be to get a cookie sheet lined with wax paper ready, and the cornflakes measured out. Step 2 should then follow as listed.
Love it so much. However I couldn’t find the light corn syrup, substituted it with honey instead. Turn out to be delicious too. For your recipe, will the cookies become crunchy? Mine isn’t so. Thanks for the recipe?

Dont use this recipe …dont cook your peanut butter…big failure! Use a recipe that u add ur peanut butter after u cook syrup and sugar…ugh!
We have had great success with this method (as have most readers) and find it makes the peanut butter smooth and easy to mix.
I just had the same problem and I made my own corn syrup. So disappointed. I am going to have to find the other recipe. Waste of a double recipe!!!

I love these cookies (peanut better cornflake cookies) but I cannot seem to make them correctly. Mine end up so hard that you cannot bite into them. You can nook them in the microwave for about 10-15 seconds and eat them that way but who wants to do that every time. Could you possibly help me out, this is my absolute favorite treat.
So strange Gina, this recipe turns out perfect for us every time. Maybe you boiled the sugar mixture too long? That could cause them to be extra hard once cooled.
Dont use reduced fat peanut butter or they will be hard as rocks.

I haven’t made these yet but I was thinking of putting green food coloring in right before you stir in the corn flakes and shaping them into wreaths. Do you think they’ll firm up enough to hold the shape?

I made these for the first time to take to a Christmas party I don’t really like peanut butter never buy it unless for a receipt like this. I have always made the chocolate oatmeal no bake cookies they have some peanut butter in them I like them ok I tried a small piece of this not bad. My grand daughter will love them she likes peanut butter I might put some reces pieces in them next time. Thanks
I have made a variation of these for years my kids favorites. Our is only light corn syrup and peanut butter equal quantities ( 1 bottle syrup 16oz 1 container of PB approximately 16 is) heat until melted add Special K cereal. Drop and cool.

Sorry to hear that Robin, this recipe has worked as written for many readers. Possibly the sugar was boiled a bit too long as the ratios on this recipe have consistently produced good results for us.
Could you make a no bake with pumpkin corn flakes? What reciept would you use?

This recipe is over 50 years old. I learn to make it during a home economics class in junior high school. I have made it for years and it is always a hit where ever I take it. I use an electric skillet, and sometimes crunchy peanut butter. I have never used vanilla.
