Most people are probably currently trying to behave themselves and stick to their New Year’s resolutions, but I am not one of them. So for those of you who are, I apologize in advance for tempting you with these chewy and delicious Peanut Butter Cornflakes No Bake Cookies.
Seriously, I know, it seems completely unfair of me to dangle such a recipe in front of you while you’re trying to be good, but these are just too good not to share! Like addictively good!

I’m a huge fan of no bake cookies, my mom made them all the time when we were growing up and I continue to make them in tons of different flavors today, like my Irish Cream No Bake Cookies or my Peanut Butter No Bake Cookies.
Traditionally, I make my no bake cookies with an oatmeal base, but for this recipe I decided to try something a little different, Corn Flakes! Not overly sweet, this boring breakfast cereal pairs with the creamy peanut butter to create a wonderfully sweet and salty cookie!

They’re also SUPER chewy and my husband loves them even more than the classics. In fact, I packaged most of the batch up for him to take into work and they never made it because he keeps stealing cookies out of the container and there’s no longer enough left to share!
This recipe is made with just 5 ingredients: peanut butter, corn flakes, sugar, corn syrup, and vanilla. They’re made right on the stove top and are ready in minutes, and I promise the whole family won’t be able to get enough of them!

Ingredients
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 6 cups corn flakes
Instructions
- In a large saucepan, combine the sugar, corn syrup, and peanut butter. Cook over medium high heat until center starts to boil, make sure to stir constantly so the sugar doesn't burn.
- As soon as the sugar mixture comes to a boil, remove from heat and stir in the vanilla extract and corn flakes, mix until corn flakes are evenly coated in sugar mixture.
- Use an ice cream scoop to drop cookies onto parchment paper as quickly as possible before mixture starts to cool and harden.
- Let cool on the parchment paper for 20 to 30 minutes before enjoying.

Got this recipe from my husband’s aunt early 60’s. The original recipe says to cook the sugar and a little salt with a bottle (16 oz.) dark Karo syrup just until boiling. Take off the fire and add the vanilla and 1 1/2 cups peanut butter, then stir until melted and pour over 10 cups of corn flakes before molding into shape and putting onto buttered wax paper to cool. The name of the recipe is Peanut Butter Chewies.

Likely the sugar was boiled a bit too long as the ratios on this recipe have consistently produced good results.
Make with chocolate frosted flakes and toss in about half a cup of milk chocolate chips. My kids say they taste like a peanut butter cup.

These are super easy and everyone loves them. I added a half stick of butter for a creamier coating. I didn’t have regular corn flakes, so frosty flakes made their debute! Not recommended for anyone with sugar issues! The sweetness is delicious!

My husband works out of town, and I sent about 15 of these candies with him. How long will they stay good? I wrapped them individually in plastic wrap.

The first time I made this recipe they were perfect! The second time I made, followed the same exact recipe, they got very hard. Do you know what could cause that? Maybe mixing too much?
It always works for me so I can’t say for sure but it may have boiled too long.
Do not use reduced fat peanut butter or they will end up hard as a rock . If your doing every thing right, then its the peanut butter I promise.

Not bad. Had to wait till it cooled before it would stick together. Hardened fast. Very chewy.

I have found that you can generally reduce the sugar in any recipe by ⅓ without altering the flavor.

I am diabetic, so I tried making these with 3/4 c. corn syrup and NO SUGAR. I am sure they would be tastier if prepared as written, however, they were very good! Everyone who has tried them really liked them, and I made another batch yesterday, shared with my friend, and she asked for the recipe! So, yes, try them with less or no sugar!

My grandmother use to make these when I was younger. The only difference is she would put them in a pain like you do with rice crispy treats and top with melted chocolate.
