Most people are probably currently trying to behave themselves and stick to their New Year’s resolutions, but I am not one of them. So for those of you who are, I apologize in advance for tempting you with these chewy and delicious Peanut Butter Cornflakes No Bake Cookies.
Seriously, I know, it seems completely unfair of me to dangle such a recipe in front of you while you’re trying to be good, but these are just too good not to share! Like addictively good!

I’m a huge fan of no bake cookies, my mom made them all the time when we were growing up and I continue to make them in tons of different flavors today, like my Irish Cream No Bake Cookies or my Peanut Butter No Bake Cookies.
Traditionally, I make my no bake cookies with an oatmeal base, but for this recipe I decided to try something a little different, Corn Flakes! Not overly sweet, this boring breakfast cereal pairs with the creamy peanut butter to create a wonderfully sweet and salty cookie!

They’re also SUPER chewy and my husband loves them even more than the classics. In fact, I packaged most of the batch up for him to take into work and they never made it because he keeps stealing cookies out of the container and there’s no longer enough left to share!
This recipe is made with just 5 ingredients: peanut butter, corn flakes, sugar, corn syrup, and vanilla. They’re made right on the stove top and are ready in minutes, and I promise the whole family won’t be able to get enough of them!

Ingredients
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 6 cups corn flakes
Instructions
- In a large saucepan, combine the sugar, corn syrup, and peanut butter. Cook over medium high heat until center starts to boil, make sure to stir constantly so the sugar doesn't burn.
- As soon as the sugar mixture comes to a boil, remove from heat and stir in the vanilla extract and corn flakes, mix until corn flakes are evenly coated in sugar mixture.
- Use an ice cream scoop to drop cookies onto parchment paper as quickly as possible before mixture starts to cool and harden.
- Let cool on the parchment paper for 20 to 30 minutes before enjoying.

I make these every Christmas. I cook the mixture in the microwave. Then add green food coloring. I pat each one down & add some red cinnamon pieces. The cornflakes look like leaves.

My grandmother cooked in the school lunch room when I was in school and she made these, believe me it was a long time ago. Back then they had to use what the government gave them to use. Thanks for the memory.
Hey Bev, I just found this recipe and YES I can’t believe that I too had this when I was very young. Had forgotten about it. But I’m gonna make them now for my daughter and grandkids. I hope that they will Love them as much as I did.

What brought back the memory was a new Hershey bar called Hershey’s Gold. It has peanuts and pretzels in a caramelized creme. There was a familiar flavor that I caught every time I took the first bite, but just couldn’t get it. Bit O’ Honey? Not quite. Tigers Milk bars? Nah. Then when I remembered there were peanuts, I went to peanut butter, and then it hit me with a huge smile–my favorite elementary school cafeteria treat! (1950s-60s) I tried making them as a kid with just peanut butter and sugar, and of course corn flakes, and they came close but now I know the real recipe. Can’t wait to make a batch!

I made this recipe today and it tasted really good until the cookies stuck to the wax paper and it was extremely hard/impossible to get off. Maybe it’s best to use cooking spray or use another surface?

I use a stick of butter and smear it on the wax paper. Cookies come off easily

Is white Karo syrup the same thing as corn syrup?
Yes it is.
Add some coconut and use crunchy peanut butter. Totally delicious!

I believe the equivalent in the UK is called Golden Syrup.
Are there any substitutions for corn syrup? I don’t live in the states right now and can’t easily get it.
If you have access to it, you can try golden syrup.
Karo syrup is clean and can be used
For 1 cup corn syrup use 1 1/4 c granulated sugar and 1/4c hot water
Hi I’ve made these when my kids were little they now are in40 and 50 year olds.
Me too!! I knew the recipe by heart but since I hadn’t made them in a few years I decided to Google it. It seems like I used less corn syrup but this recipe coats the corn flakes better. Just as good as I remembered!

I have made these for years except with Special K cereal. A family favorite.
If mine are crunchy, not chewy am I boiling the corn syrup too long. Or just not enough peanut butter?
For chewier, less crunchy cookies, I like to keep the heat on until all the corn flakes are combined. I’ve made these since I was a kid and prefer them this way. Hope this helps
I also like a more softer cookie, I was wondering if I added some more peanut butter, would that make them more chewy?
