Key Lime Pie

With summer in full swing, no-bake desserts are our favorite. They are so easy to make and always a crowd pleaser for kids and adults alike. No bake desserts are always a winner, especially this key lime pie recipe. The cheesecake filling, from the zest and juices of the lime, combined with the sweetness of the condensed milk gives the pie so many amazing flavors in every bite.

Whenever I make this easy key lime pie recipe, we barely give it enough time to set and it’s gone. It’s one of our favorite summertime desserts! And since it is a no-bake dessert, it’s basically foolproof.

How to Make No Bake Key Lime Pie

CRUST: Though you can substitute store-bought crust, this homemade crust is extremely easy to make (and kids love helping).

  1. Crush graham crackers in a zip top bag with a rolling pin or a food processor.
  2. Stir in butter and press crumb mixture into the bottom and sides of the pan.

FILLING: This easy filling is made with just 5 ingredients!

  1. Combine filling ingredients until creamy and spread evenly over crust.
  2. Top with lime zest, whipped cream or lime slices.

Allow the pie to chill at least 4 hours in the refrigerator or overnight before serving.

TIPS: Add parchment paper to the bottom of the pan for neater and easier removal of pie pieces. For clean slices, run the knife under warm water after each cut.

How Long Will It Last

The pie may be kept covered and refrigerated 2-3 days. The crust will get softer the longer it’s stored.

If freezing, this pie will last well for up to 2-3 months. Thaw the frozen key lime pie overnight in the refrigerator and top with the desired garnish before serving. This key lime pie dessert is a great option to make and freeze if you’re prepping for a party and want to start baking early.

TIP: Frozen key lime pie is also a great option to serve partially frozen during the hot summer days for a cool treat and is always a hit at parties!

No Bake Key Lime Pie

Ingredients  

Crust

  • 1 ⅔ cups graham cracker crushed
  • 8 tablespoons unsalted butter melted

Pie

  • 16 ounces cream cheese softened
  • 1 cup sweetened condensed milk
  • cup lime juice
  • 1 tablespoon lime zest
  • ¼ cup granulated sugar

Instructions 

  • In a bowl, combine crushed graham crackers and melted butter. Press firmly into the bottom and sides of a 9" pie dish.
  • Combine the softened cream cheese with condensed milk, lime juice, sugar and lime zest in a bowl until creamy and well incorporated.
  • Pour the cheesecake pie filling over the crust. Spread evenly and refrigerate at least 4 hours, or overnight.
  • Garnish as desired with limes, lime zest, or whipped cream.

  1. I made this and my husband and I are obsessed. We have made 4 or 5 of these in the past three months – i’ve got to slow down or my pants wont fit!! We put ours in the freezer and love it served extra cold like that – plus keeps longer. seriously best key lime recipe ever!5 stars

  2. Great recipe! Easy to make and so delicious! I cut the cream cheese to 12 ounces (personal preference) and followed the rest of the recipe exactly. I had a bit of extra graham cracker crust, so I sprinkled it on top of the cream cheese filling. Very fresh flavor, not too lime-y. Thank you for the fantastic recipe!5 stars

  3. Unsure of what happened but the softened cream cheese wouldn’t get creamy it created little chunks, like cottage a cheese texture. No matter how long I let it go in my kitchen aid it wouldn’t get creamy. It didn’t set even after 12 hours of refrigeration. The flavor is great though. Next time I’ll melt the cream cheese in the microwave instead of using softened.3 stars

  6. For a Lime Pie, this recipe is fine However, if you’re calling it KEY lime pie, shouldn’t it include Key Limes? The photo shows slices of what appears to be Persian Limes (the most common in the US.). to make a Key Lime pie takes about a dozen to get enough juice, but it has a much stronger taste and is more tart than the Persian. Try this with REAL key kimes and taste the difference.

  8. I made this for Father’s Day as my husband loves key lime. It was a hit! He is very picky and said this was one of the best desserts I’ve made in a while lol. I did make a whipped cream as well using lime zest and I was able to find actual key limes in the grocery store so that helped. Thanks for the recipe!5 stars

  9. Turned out super creamy and delicious! And it was easy! I added more lime juice and a little powdered sugar to make it less of a cream cheese taste. I also baked the graham crust for 6 minutes to help it set and have a little more taste. It turned out perfect4 stars

  13. Yummy key lime pie although I used regular limes and store bought graham cracker crust and topped each slice with a dollop of lite cool whip and extra lime zest.

    My husband liked it a lot also. Thanks for sharing such a simple to make recipe that tastes so good.

  14. Yummylicious! Whenever I make a no-bake dessert like this, I love to use 8oz canning jars for individual servings. This recipe made 8 desserts, and there was enough room to top each one with homemade whipped cream. I did make one substitution, though. I used Nellie & Joe’s Key Lime Juice.5 stars
