- 1 tablespoon baking powder
- ½ teaspoon salt
- 2 large eggs yolks and whites divided, room temperature
- 1⅔ cups milk
- ⅓ cup unsalted butter melted (or vegetable oil)
- 1 teaspoon vanilla extract
Instructions
- Preheat the waffle iron according to the manufacturer's directions (or to 400°F if your waffle maker has a temperature gauge).
- Place flour, sugar, baking powder, and salt in a large bowl. Whisk to combine.
- In a small bowl, mix egg yolks, milk, butter, and vanilla extract. Set aside.
- In a separate medium bowl, beat egg whites with a mixer on medium high speed until stiff peaks form. *see note
- Add the egg yolk mixture to the dry ingredients and stir to combine. Gently fold in the egg whites.
- Drop by large spoonfuls onto greased waffle iron until most of the wells are covered. Close the lid and cook for about 3-5 minutes or until golden brown.

- Refrigerate leftovers for up to 7 days, or freeze for up to 6 months. Place sheets of wax paper or parchment between waffles before placing in freezer bags. Reheat briefly in the toaster until crisp. Watch for burning.
- This recipe assumes you are using unsalted butter. If using salted butter, eliminate the salt ingredient.
- *Whipped egg whites make the lightest, fluffiest waffles, but you can make this recipe without beating the egg whites. If you do not, then reduce the milk to 1 1/2 cups, and add whole eggs to the butter mixture.
- Keep waffles warm in a 200°F oven while you make the remaining waffles.
- Buttermilk Waffles: To make, replace milk with buttermilk, reduce baking powder to 1 1/2 teaspoons, and add 1/2 teaspoon of baking soda.
- Don’t overmix the batter, it should be slightly lumpy.
- Preheat the waffle maker and lightly wipe with vegetable oil. Do not use cooking spray.
- Put enough batter in the iron so the waffle compartment is almost full so it will cover the edges when closed.

Way better than store bought and very easy.
These were delicious! A few months ago we got out a 50 + year old waffle maker that hadn’t been used in decades. I used it twice with a batter mix but tried your recipe today as a trial run before making them for my grands when they visit next weekend. Since it made 12 and it’s just my husband and me today, I have 8 left over so all I need to do next week is heat them. Any suggestions for keeping the the waffles hot and crispy till the rest of the batter is used after you make them originally? Thank you!
They are best served immediately, or heated in the toaster. You could try keeping them warm in a 200F oven. They may not stay crispy, so you could pop them in the toaster or air fryer briefly before serving.
I loved this recipe. So easy to make and the waffle turned out nice and fluffy. I liked that it is not overly sweet as well. They were so golden and perfect. Better than the restaurant waffle.

Hello, I’m planning to make these tomorrow. Can I make the batter in advance and keep it in the fridge until I need to use it or is it better if I make it just before cooking it? Thanks
We haven’t made this recipe ahead and refrigerated it, so can’t say for sure Amanda. I’d suggest preparing your wet ingredients (and refrigerate) and dry ingredients, and mix together in the morning. But if you do try mixing the night before, let us know how it works for you!

Hi , in the middle of giving these a try ! Do you have any recommendations on waffle makers machines ? I have the single dash waffle maker lol and takes forever
I use the Cuisinart Griddler with waffle plates. It’s a bit pricey but does many other things.
For waffle iron that makes waffles only, a Dash waffle iron is a great option as they’re highly reviewed. I do have a smaller Dash waffle iron and it makes great waffles with even cooking. There are lots of great options on Amazon too depending on what you are looking for.

They’re amazing! Make sure you cool the melted butter down before adding egg yolks. I also added a mashed banana and cinnamon, it tasted great!
My husband always preferred pancakes to waffles until I made these! I used butter and whipped the egg whites. The inside of the waffles was so light and fluffy and the outside crisp as it should be. You’ve won him over.
Good recipe but be sure that the melted butter is cooled to room temperature and that the milk is warmed to room temperature. Otherwise you will cook the eggs and/or congeal the butter when you combine the wet ingredients. I’m using my parents circa 1955 waffle maker and they turned out fine.
I didn’t know this and my recipe completely flopped! When I combined my melted butter to my cold milk, the temperatures made the butter harden into chunks!!
