Chocolate Mayonnaise Cake

Chocolate Mayonnaise Cake has to be one of the most decadent, delicious and easy cakes I have ever made! Simply combine all ingredients together, pour into a pan and bake.  That is it!  You will never want to use a prepared cake mix again once you try this recipe!

I’m definitely not a cake snob, I’m happy to use a boxed cake mix in a pinch (or even to doctor them up like in my favorite Chocolate Banana Cake).  But seriously, this Mayonnaise Cake makes even boxed cake mixes seem like work! Mix ingredients together, pour into a pan, bake…done!

If you believe you are not a baker at heart, you’ll love this Chocolate Mayonnaise Cake recipe because it’s so easy – even you can bake it perfectly!

Don’t let the idea of mayonnaise in a cake scare you away.  Mayonnaise is basically made of oil and eggs which are in pretty much every cake recipe and it truly makes this cake moist and decadent.

TIPS FOR A PERFECT CAKE

  • Using full fat mayonnaise produces the best results.  Light versions work but it will change the texture of the cake and make it chewier.
  • Don’t overmix the batter.  It may appear slightly lumpy but that is ok.
  • Use room temperature eggs. If your eggs are cold, place them in a bowl of warm water for a few minutes. There are no eggs in this recipe but a great tip when baking cakes in general!
  • When measuring flour it’s important to remember not to scoop it into the measuring cup directly from your flour container (this packs it down and measures too much flour). Simply spoon the flour into your dry measuring cup and level the excess off with a straight edge.
  • Do not over bake your cake.  Check it by inserting a toothpick into the cake.  If the toothpick comes out clean, your cake is good.

I can remember being a teenager and my friend’s mom made a mayonnaise cake. I have to admit that 3o years later, I still remember that moist tender cake and how amazing it was!  When I got my hands on a pile of vintage recipe books and saw this recipe again, I knew I had to make it.  There is a good reason this old fashioned mayonnaise cake recipe has been around for so long!

You can use any kind of frosting on this cake including my One Minute Easy Chocolate Frosting  or my favorite Chocolate Ganache Frosting. This Chocolate Mayonnaise Cake is so wonderfully simple and unbelievably delicious that your friends will be asking for the recipe!

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking soda
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • 1 cup creamy salad dressing Miracle Whip or mayonnaise
  • 1 cup water lukewarm

Instructions

  • Preheat oven to 350°F.
  • Grease and flour a 9x13 inch baking dish. 
  • Mix together all the ingredients in a large bowl.
  • Pour into prepared baking dish.
  • Bake in preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool completely.

  2. This was really good!! I messed up the amounts. That was on me. I wanted to make 2 9” rounds so I was adding an extra half of everything but doubled the cocoa powder. No problem, I tested the batter and just added more sugar. Thank you so much for the recipe. My scratch cake usually taste so heavy and this was perfect.5 stars

  4. Hi. I made this twice and both times it turned out extremely horrible. I cant understand why. It was very dry and hard and not sweet. I baked the whole batter in two 6” round pans. What could have been the problem?
    Mayonnise has to be upto the brim of the 1cup or should it be shaved? Should it be tapped in to make space for me? Please guide. I reallly want to succeed in this recipe

    1. Hi Sania, I can’t say for sure, as I haven’t had that problem with the cake. Here are some tips:

    1. While we haven’t baked a half recipe ourselves, this should work. Use an 8×8 or 9×9 pan, and check if the cake is done after about 20 minutes, baking until a toothpick comes out clean. Let us know if you try it Nancy!

    2. Easy to cut in half, since there are no eggs…. I cut this by 16 when my daughter had an easy bake oven. It worked great, and was way better and cheaper than one of their mixes

This recipe is a very popular reader recipe and I have made it many times and it’s turned out perfectly for me. Did you measure the flour by spooning it into your measuring cup? Is your baking soda fresh? Did you use full fat mayonnaise? Is it possible that you overmixed or overbaked?

I also wanted to share that I subbed Vegenaise (a vegan Mayo found in the refrigerated section of the grocery store) and the cake came out delicious and moist, and not with the weird texture issues that a lot of vegan baked goods have.   10. I don’t know how people are not liking this….it’s got to be a error on the bakers part because I let my 2 year old help (so all the measurements were off a bit) and it tasted great! I would just change bake time to 25-30 min, as I almost over baked it but checked it at 27 minutes luckily!! Great cake! I used miracle whip mayo and it was fine.5 stars

  12. my mom made this cake when i was growing up . its delicious. but what makes this cake so good is the frosting. i will share the recipe as it makes the entire cake. 1 cup sugar 1/4 cup cocoa 1/4 cup butter 1/4 cup milk 2 tsp vanilla. boil for 2 minutes. remove from heat and continue to stir until it thickens. pour over cake and refrigerate

    1. How disappointing, I’m sorry this didn’t work out for you. As you can see from the reviews, this recipe usually comes out moist and delicious so I can’t say for sure what went wrong.

    2. Wow that surprises me!! I’ve made this recipe quite a few times with no problems. This is the easiest, best tasting chocolate cake I’ve ever made!! Are you sure it wasn’t “operator error”?? Just kidding, that’s too bad….

  14. In your tips you have mentioned eggs.. But nothing is mentioned in the ingredients. So we are not using eggs at all in this recipe?

  15. I haven’t made the cake yet , I was planning on it . One question ..?isn’t there a difference ( measurement wise) from a glass measuring cup and individual cups ? (If so wet and dry ingredients ) which one do you use for the Mayo ? Thank you .

    1. With mayo or other semi-solid foods, (sour cream, peanut butter, etc) they should be measured in the individual cups. Hope that helps, Colleen!
