  • 1 (15.5 ounce) can chickpeas drained and rinsed
  • 1 (15.5 ounce) can navy beans or cannellini beans, drained and rinsed
  • 2 tomatoes diced
  • 1 English cucumber diced
  • 1 bell pepper diced, any color
  • ½ cup crumbled feta cheese
  • ¼ cup finely diced red onion

Dressing

  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  • In a medium bowl, combine chickpeas, navy or cannellini beans, tomatoes, cucumber, bell pepper, feta cheese, and red onion.
  • In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, oregano, salt, and black pepper
  • Pour the dressing over the salad and toss well to combine
  • Cover and refrigerate for at least 1 hour before serving

Notes

Optional additions:
