  • Bread: Choose denser breads that produce more crumbs, including the heels. Collect scraps and heels of stale bread, dried out rolls, or buns; anything goes.
  • Panko: Panko bread crumbs are processed differently, and they’re flatter and stay crispy longer than regular breadcrumbs. Buy it or learn how to make your own Panko here.
  • Seasonings: We kept it basic, but you can try mixing homemade breadcrumbs with lemon pepper seasoning, Cajun seasoning, or Adobo seasoning for a kick. Or use an Italian blend to boost the flavor of recipes like this Parmesan chicken meatloaf.

How to Make Breadcrumbs

  1. Cut stale bread into cubes and spread them on a baking sheet.
  2. Bake, stirring occasionally, until the bread is dry (not browned).
  3. Transfer cooled bread cubes to a food processor and pulse.

  2. Transfer bread crumbs to an airtight container.

Storing Seasoned Bread Crumbs

Store seasoned breadcrumbs in an airtight container at room temperature for up to 2 weeks.

For longer storage, pop them into a zippered bag and freeze for up to 3 months. Simply scoop out what you need – no thawing required!

Seasoned Bread Crumbs

This easy seasoned bread crumbs recipe uses panko or plain bread crumbs, herbs, and spices for a flavorful, homemade alternative to store-bought.

Ingredients  

  • 2 cups plain bread crumbs or panko (see notes to make your own)
  • 2 teaspoons dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¾ teaspoon salt
  • ¼ teaspoon dried oregano

Instructions 

  • In a large bowl, combine the bread crumbs with parsely, garlic powder, onion powder, oregano, and salt.
  • Store your seasoned breadcrumbs in an airtight container at room temperature for up to 2 weeks, or freeze for up to 3 months.

Notes

*To make your own breadcrumbs: Cut 8 slices of day-old or stale bread into cubes. Spread in a single layer on a rimmed baking sheet and bake at 300℉, stirring occasionally, for 25-35 minutes or until completely dried but not overly browned. (This may take longer for fresh bread). Cool bread cubes and blend in a food processor until they become fine crumbs.
You can use any type of bread you like — white, whole wheat, sourdough, or even a mix.
Keep leftovers in an airtight container in the refrigerator for 2 weeks or in the freezer for 3 months.
