This chicken salad recipe is one of my favorites—it makes a delicious quick lunch or dinner.
Chicken, mayonnaise, a few add-ins and some seasonings come together to create a creamy salad or filling for a homemade chicken salad sandwich or wrap!

Chicken Salad Ingredients
- Chicken: I most often use rotisserie chicken, but leftover chicken of almost any kind, including grilled chicken, can be used. If using canned chicken, mix all ingredients except the chicken in a bowl and then gently fold in the drained canned chicken.
- Add-ins: Since this is a classic chicken salad recipe, I add celery for crunch and green onion for flavor.
- Dressing: Mayonnaise adds a creamy texture, while simple seasonings add flavor.
Variations
- Add dill or other fresh herbs.
- Lighten it up a bit by replacing half of the mayo with Greek yogurt.
- Change the flavor by adding ranch dressing.
- Dress it up with add-ins like chopped apples, grapes, or chopped nuts such as almonds, walnuts, or pecans.

How to Make Chicken Salad
Prepare this classic chicken salad recipe in just 15 minutes with only a few simple ingredients.
- Chop cooked and cooled chicken and place into a large bowl with celery and onions.
- Mix dressing ingredients (recipe below) in a bowl. Toss with chicken.
- Serve on rolls, bread, or over a bed of lettuce.

Storing Leftovers
Refrigerator: Store chicken salad in an airtight container in the fridge for up to 5 days. Stir before serving.
Freezer: Prepared chicken salad doesn’t freeze well however, to prep ahead, dice the chicken and freeze it it. When ready to make the salad, combine the thawed chicken with the remaining ingredients below for a quick lunch!

Instructions
- In a medium bowl, add chicken, mayonnaise, celery, green onion, mustard, salt, pepper, and dill if using. Mix well to combine.
- Taste and season with additional salt and pepper if desired.
- Serve as a sandwich or over salad.

Delicious! For a nice “spin” on this recipe, I added chopped gherkins (Maille – L’Original, the little ones) and a little Sambal Oelek. I reduced the mayonnaise to 1/3 cup, and added more fresh dill. I doubled the recipe for a hungry crowd, serving this salad on fresh ciabatta buns.
Wonderful Chicken Salad Sandwich does not disappoint. I hosted a ladies luncheon and everyone raved about how flavorful and delicious this recipe is. I served the filling on fresh buttered, bakery croisants with fresh leafy lettuce accompanied by a nice spicey apple salad with a cider vinigrette dressing and a cold pitcher of fresh lemonaide. We finished our lunch off with Strawberry Shortcake & coffee! I will definately make this again!!

the dijon mustard and fresh dill add some amazing flavor to this recipe! i tweaked it slightly, using more light mayo and a squeeze of lemon juice. this is a perfect make-ahead lunch and a great go-to when it’s too hot to cook!
I’ve made this before and YES it is delicious!! But now I’m confused reading fresh dill vs. pickles. I was thinking dill herbs. What is it “specifically “ calling for? Please don’t say whatever works for my palette…. I’m just looking for clarity. Thanks! I’m sure it’s good either way!
I am not sure what portion of the recipe you are referencing, Sue. For this recipe you can add 1 teaspoon fresh dill if you enjoy the flavor. Or some readers (myself included) have added in 2-3 chopped dill pickles instead for some extra crunch and it is delicious!
This is a wonderful chicken salad recipe! I love it over lettuce with tomatoes and cucumbers. I added a lot more celery, and green onions, plus lots of dill just because I love those flavors! But this is a great recipe no matter how you style it.
Oh my goodness!!! We used a rotisserie chicken for this recipe and EVERYONE wanted the recipe! Delicious for sure!!! We used red onions, finely chopped.

I have made this. It is easy and delicious. We always use left over rotisserie chicken. Then, we use the carcass to make homemade soup.
We certainly get our money’s worth out of that $5 bird.

I made this with the white meat from a Costco rotisserie chicken. chopped into small pieces. It was almost exactly 2 cups. I Since celery comes in a variety of sizes, I used two ribs and chopped fairly fine. Ditto with green onion, so I used two but left them in slices. I followed the rest of the recipe exactly, using 1/2 t cayenne and 1/2 t white pepper because I like pepper. I will definitely make this again but will try chopping the chicken so there are no chunks, as another commenter noted.

This is the BEST chicken salad I’ve ever made. My husband requests this at least once every two weeks for our lunch, served with Club Crackers. This recipe can easily be halved. We use Lawry’s Seasoned Salt 25% Reduced Sodium and add a tsp of dried dill. He likes the salad diced and combined well, no big chunks of chicken. Truly a classic, THANK YOU!
