Veggies don’t have to look perfect to taste great! I was recently in our little corner market while a fellow was sorting through the bell peppers. I’d asked him what the peppers in the box were for. He told me they were garbage because they didn’t have a nice shape so they wouldn’t sell.
The Perfect Spinach Dip
Well I bought those little perfectly imperfect peppers and I paired them with a little bundle of forgotten spinach for a deliciously amazing Ranch Spinach Dip! This Cheesy Ranch Spinach dip recipe is packed with spinach and peppers and fully loaded with flavor!
Make Ahead Spinach Cheese Dip
Not only is it perfect for any gathering, this dip can actually be prepared a day in advance and put it in the oven just before serving!
- 2 bunches spinach washed
- 8 oz cream cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/4 cup sliced green onion
- 1/2 cup diced red pepper
- 1 package Hidden Valley Ranch Greek Yogurt Dip Mix
- 1 1/2 cups mozzarella cheese divided
- 1/4 cup parmesan cheese
Preheat oven to 350 degrees F.
Wash and roughly chop spinach. Place in a non-stick pan over medium heat until cooked. Cool completely.
Once cooled, squeeze as much liquid as possible out of the spinach.
Combine all remaining ingredients except 1/2 cup of mozzarella and spread into a 2 quart casserole dish. Top with remaining cheese and bake uncovered for 25-30 minutes or until hot & bubbly.
