Buffalo Chicken Pizza
Equipment
- 12-inch Pizza Pan or pizza stone
Ingredients
- 1 roll refrigerated pizza dough or ½ pound homemade pizza dough
- ¾ cup blue cheese dressing divided, or ranch dressing
- 2 cups cooked shredded chicken
- ½ cup buffalo sauce
- 2 tablespoons thinly sliced red onion
- 2 cups shredded mozzarella cheese
- ¼ cup shredded Parmesan cheese
- 2 tablespoons chopped fresh cilantro
- 1 green onion thinly sliced
Instructions
- Place a baking sheet or pizza stone in the oven. Preheat the oven to 475°F.
- Roll out the pizza dough to a 14-inch circle on a piece of parchment paper.
- Spread ½ cup of dressing over the pizza dough.
- Toss the chicken with buffalo sauce and spread it over the dough with the sliced red onion.
- Sprinkle the mozzarella and parmesan cheese on top.
- Transfer the pizza to the preheated baking sheet or pizza stone and bake for 15-18 minutes or until crust is golden and cheese is bubbly.
- Remove from the oven and sprinkle with chopped cilantro and green onion. Drizzle with the remaining dressing.

How many chicken breasts I need? And brand pizza dough should I get? Doesnt Pillsbury have one?
It will depend on the size of your chicken breasts, but approximately 3 chicken breasts. And any brand of pizza dough will work just fine.

I would like to make this Pizza, but my Chicken is boneless, skinless Breast. How would I cook it to shred it?? I usually make Baked Chicken Fingers with them. I don’t have the Marie’s Blue Cheese, so what can I use instead?? Some of my family doesn’t like Blue Cheese. Want to make this fantastic to go with the Baked Buffalo Wings. My family loves Spicy. I’m sure these will be a joy along with good games. Thanks!!!
You can cook the chicken for shredding in the oven directions here or on make poached chicken on the stovetop directions here. If you aren’t a fan of blue cheese, this recipe is great with ranch dressing too!
I made this using the for lunch using the excellent dough recipe. I took the short cut route and used canned chicken breast (from Costco), mayo for the “sauce” because I wasn’t sure if my kid would care for the Blue Cheese. I sprinkled a little bit of garlic over the mayo, then topped with the buffalo chicken, very thin sliced yellow onion, and mozzarella. I baked it at 550 for 7 minutes. When it came out I drizzled the Blue Cheese dressing over it and topped it with mounds of shredded iceberg lettuce.
It was divine!
