  • Avocados: Choose fresh avocados that are a little soft when you squeeze them. The skins should be either dark green or nearly black, depending on the variety. Ripen avocados on the counter, and then store them in the refrigerator once they are ripe.
  • Bread: Any bread works for avocado toast. Artisan bread, like sourdough, is great because you can slice it into any thickness, but even sandwich bread works, as long as it’s sturdy enough to hold the toppings. Bagels are another great choice.
  • Seasonings: A swipe of fresh garlic adds a savory flavor to the rich, buttery flavor of avocado, but it’s optional.

Equipment

Ingredients  

  • 1 avocado
  • 2 slices sourdough bread or any variety of bread
  • 1 clove garlic optional, cut in half (skin on)
  • kosher salt and black pepper to taste
  • drizzle extra virgin olive oil good quality

Instructions 

  • Cut the avocado in half and remove the pit.
  • Scoop out the avocado flesh with a spoon and add it to a medium bowl. Use a fork to mash, leaving some small chunks.
  • Toast the bread to your liking.
  • While the toast is still hot, lightly rub the surface with the cut side of the fresh garlic clove (optional).
  • Divide the mashed avocado over the toast and sprinkle with salt and pepper to taste. Serve immediately.

Notes

The avocado can be mashed as smooth or as chunky as you’d like it. Avocado oxidizes (turns brown) quickly, so mashed avocado should be eaten right away. If using only half of the avocado, leave the pit in the half that will be refrigerated for later use. This will help keep it fresh a bit longer.

  3. Just had this. Amazing. I’m gonna try it without rubbing the garlic for comparison, but you are completely correct. I couldn’t taste the garlic but knew the accents really drove the flavors home. Slight variations are endless. I’ve eaten avacado with raw egg yolk forever but the olive oil brings a similar quality and easier to prepare. Had one with goat cheese too.5 stars

  4. This is my favorite avocado toast recipe. Simple and healthy, and above all wonderful for flavor! Make sure you rub the fresh garlic clove while the toast is hot. I did not and would not change a thing in this recipe.5 stars

    1. Try laying a full slice of onion on top or near it. I’ve never tried it with mashed avocado, but I put a wedge of onion in a closed container when I have half an avocado and that seems to work well!

  7. Wow, so creamy, so good. I’ve only used plain mashed avocado on regular toasted bread before. Your recipe with the added additions of using garlic, lemon juice, olive oil & cilantro is exactly what plain avocado toast needs! SUPERB! I was so inspired I used some Kings Hawaiian rolls I had on hand (split in half) for toast instead of bread. Toasted them with tad of garlic powder (didn’t have any fresh on hand) & Smart Balance then followed rest of your recipe (using chopped fresh cilantro). OMG SO GOOD!   9. I don’t keep avocados on hand, I get the individual mashed avocado containers that come Spicey or regular, so it is handy whenever I want it . Sometimes add salsa to it . So toast, mashed avocado and then sliced boiled egg with salt and pepper. We kept a little boy that ate it too and liked it !
