Do you prefer Apple Pie or Cupcakes for dessert? Pfft, I say why choose when you can have the best of both worlds!

If you’ve never had surprise cupcakes, you’ll love them!  They are so easy to make yet look impressive (and taste amazing)!  These Apple Pie Cupcakes are soft and fluffy cinnamon infused cupcakes with a surprise apple pie filling in the center!

To make these you will whip up your favorite white cake batter (with a touch of cinnamon added in) and top with a little bit of apple pie filling (store bought or homemade).  There’s no need to add extra batter on top of the pie filling, it finds its way to the center of the cupcake!  We serve these warm with ice cream or whipped cream.  The pie filling makes these exceptionally moist and delicious.

* apple pie filling (or homemade) * white cake mix * cupcake pan * cupcake liners *

Apple Pie Cupcakes

Cook Time 18 minutes
Total Time 33 minutes

Ingredients  

  • 14.25 ounces white cake mix 1 box, plus ingredients required on the box for cupcakes
  • 1 teaspoon cinnamon
  • 22 ounces apple pie filling 1 can, or 1 recipe Homemade Apple Pie Filling
  • whipped cream or ice cream, for topping, optional

Instructions 

  • Preheat oven to 350°F & line cupcake pan with liners.
  • Make cupcake batter according to box directions. Stir in cinnamon.
  • Chop apple pie filing into bite sized pieces.
  • Add 3 tablespoons of cake batter to each cupcake liner. Place 1 slightly heaped tablespoon of pie filling on top of the batter.
  • Bake 18-20 minutes.
  • Top with ice cream or whipped cream.

  1. I agree with Nita also filing came out of the bottom of cupcakes when cupcake paper wrap was taken off. I will try next time like another commented batter filling then batter again.

  3. I made these and they were a big hit… Everyone loved them. My only complaint is that the pie filling went all the way to the bottom so the filling fell out of some of them. What did I do wrong?4 stars

  4. Tried this today and they turned out really well! We love apple pie so this was a good way to have this dessert as cupcakes during a season other than Thanksgiving. When I filled the cup with batter and then filling, the filling rose to the top. I did the second batch with batter then filling and topped that with batter. The second batch turned out better, with filling in the middle as intended. Just a tip in case others have this problem. Thanks for the recipe!!4 stars

  5. Oof, what a mess… Followed instructions to the letter and they aren’t cupcake shaped more like puddles? I don’t even know lol. Maybe it was the cake mix I used (normal white cake mix) or something with the topping *shrugs* On well, gonna keep watch on them and hope for the best while baking this next batch. Sighhh, here’s hoping they still taste good!

    1. Oh no, how disappointing. I also used just a regular cake mix. Hopefully your second batch worked out better for you!

  6. I substituted a yellow cake mix for the white one. (I never know what to do with the egg yolks that you don’t add to the white cake mix). And for the frosting I made a simple cream cheese frosting. Making the cupcakes was very easy and I must say very delicious!

    1. The only reason they say to only use the egg white is so your cake is more white in color. I always jus use the whole egg.

  7. I have made these using spice cake and icing them with cream cheese frosting. They were so good. Fixing to make another bunch this time I think I’ll use caramel icing.

  8. Would it be okay to fill the cupcakes after baking by cutting a hole midway in the cake? Or would that make the filling taste different

  9. Have you considered making it with spice cake? Or making it with chocolate cake and cherry pie filling. I’m having all sorts of ideas.

  10. Could you make the cupcakes first then freeze them then core the center out later and put the apple pie filling in? Since you stated you weren’t sure about freezing them right after you bake them and use for a later time.

  11. I’ve made the Apple Pie Cupcakes a couple times, once for family and once for book club. Everyone raved about them and have passed on the recipe! I’ve made the pie filling tons of time just to eat by itself! I love it on waffles for breakfast.
