Ingredients For Dortios Casserole
- Doritos: There are many flavors of Doritos, use your favorite (I use Nacho Cheese). Try siracha, cool ranch, or spicy-sweet chili.
- Meat: This recipe uses lean ground beef seasoned with taco seasoning.
- Sauce: The creamy sauce combines condensed soup, sour cream, and salsa (mild or hot). It’s easy and delicious.
- Cheese: Cheddar or a Mexican cheese blend works well here.
Variations
- Filling: Mix refried beans or black beans into the meat mixture, add extra vegetables, like corn or green chiles, or stretch the casserole by adding rice.
- Toppings: Top with your favorite vegetables like shredded lettuce or fresh diced tomatoes, or add a dollop of sour cream or guacamole on top of each serving.
- Garnish: Before serving sprinkle with cilantro, sliced green onions, or olives for added flavor.




How To Make Dorito Casserole
- Brown ground beef and onion.
- Combine the meat mixture with the remaining filling ingredients (full recipe below).
- Layer in the casserole dish and bake.
Add your favorite toppings and serve!

Holly’s Casserole Tips
- For crushing the Doritos, place them in a bag and crush them by hand, but not too small.
- Drain the fat from the ground beef so the casserole is not too runny.
- Buy pre-shredded cheese to make the assembly easier.
- Spray the tin foil with cooking oil so it doesn’t stick to the top layer of cheese.
- Remember to remove the foil for the last 20 minutes. This will help the casserole top layer turn brown and bubbly.

Ingredients
- 14.5 ounces Doritos 1 bag, any flavor
- 1 pound lean ground beef
- 1 yellow onion diced
- 1 clove garlic minced
- 1 cup salsa
- 1 package low sodium taco seasoning or homemade taco seasoning
- 1 cup sour cream
- 10.5 ounces condensed cream of chicken soup or cream of mushroom soup, 1 can
- 2 cups shredded cheddar cheese or mexican blend, divided
- toppings as desired see notes
Instructions
- Preheat oven to 350°F.
- Cook ground beef with onion and garlic until no pink remains. Drain any fat.
- Add salsa, taco seasoning, and ⅓ cup of water. Cook until thickened, about 5 minutes, and remove from heat.
- In a large bowl, combine beef mixture, sour cream, soup and 1 cup of cheese.
- Slightly crush Doritos (not completely, you don’t want crumbs). Layer 1 ½ cups Doritos in the bottom of a 2 qt casserole dish . Top with ½ of the beef mixture. Repeat layers. Finally top with an additional 1 to 1 ½ cups Doritos and remaining cheese.
- Spray a piece of foil with cooking spray and cover casserole.
- Bake 30 minutes covered, remove foil and bake uncovered for an additional 20 minutes or until hot and bubbly. Top with lettuce, tomatoes and olives if desired.

This looks fab but question- don’t the doritos get all soggy ?
They do soften but I wouldn’t say soggy, more like how a tortilla will soften in an enchilada recipe.

We had this for dinner this evening and this recipe is definitely a keeper. We had it with tomatoes, lettuce and sour cream on the side. The only difference I will make next is to put the black olives right in the casserole !!

I haven’t tried freezing it. If I did, I would freeze it before baking and cook it the same way I would cook a frozen lasagna. If you do try it, I’d love to hear how it works for you because I’m sure other readers will have the same question! :)

Looks great! I am going to try using Organic Tortilla Chips instead of Doritos to avoid GMO’s. Going to try your soup recipe, not sure on how much of it to use in the “can” measurement though?
Making your own taco seasoning is easy, the cumin & chili powder sounds great, but don’t forget some paprika/garlic salt/pinch of sugar & a little onion powder!
A typical can of mushroom soup is about 10.5 oz… If you are using the Homemade Condensed Cream of Mushroom Soup it should measure the same (so approx 1 ⅓ cup). Hope that helps!

I forgot to put the dang salsa in the mix and it’s completely prepared for the oven help!!!
Oh no! Maybe just add a little bit of salsa on top if you haven’t put the cheese on it already. If you have already put the cheese on it and the mixture seemed moist, it will probably still be ok (just a different flavor than usual). You can serve the salsa on the side!
I just prepared this dish. Although it is tasty, the chips are rubbery…. not soft. I failed to read all of the reviews to realize that my can of soup was not enough. Canned goods are sold in different sizes here (grams). Thank you for clarifying the measurement. And thank you for the recipe.

instead of throwing away the juice from the salsa, save it for the liquid in the taco seasoning and beef instead of the water…..:)
If you have a thick salsa is there a need to strain?
It just keeps the casserole from being runny. If your salsa doesn’t have any liquid you could probably skip that step (but if you notice it’s a little runny, then maybe next time you could strain it).
Instead of throwing away the juice that is drained from the salsa, measue it and add water to make 1/2 cup liquid which will then be added to the seasoning instead of just plain water!

Is there anything I can use in place of the cream of chicken or mushroom soup to make it gluten free? Thank you!
I do have a recipe for Homemade Condensed Cream of Mushroom Soup which can be substituted.
I make a slightly different version of this without the soup. I use a can of crescent rolls on the bottom for a nice flaky crust. I put a layer of crushed doritos on the crescents, then I do the ground beef and mix 16 oz of low fat sour cream with the reduced sodium taco seasoning, then cheese some more doritos and then a little more cheese and bake for 20 min at 350. Then I top with lettuce tomatoes and salsa or taco sauce.

There is no need to make anything gluten free, gluten cannot hurt you.
Gluten can hurt you if you have Celiac disease.

Josh, I am assuming that your comments were based on ignorance rather than malice or derision. There are ALL kinds of allergies. Many of them are quite serious, even life threatening. My best friend in the Army has a sister who is allergic to eggs. My mother forgot that there were eggs in a salad dressing she served and we had to rush my friend’s sister to the emergency room to save her life. My wife has Celiac Disease, which is a severe allergy to gluten. The tiniest amount of gluten will put her in serious pain. It took eight years to find the cause of the pain she was in daily. Now, if she avoids gluten, she is pain free. So, just because you appear to be one of the special people who are allergic to nothing, it is not appropriate, or even reasonable for you to assume that these allergies do not exist.
