DIY Pancake Mix Recipe

Light and fluffy, this DIY pancake mix is the perfect pantry recipe! It’s easy and inexpensive to make your own pancake mix at home.

When you need a breakfast fix, simply add eggs & milk for the perfect fluffy flapjack!

This DIY Pancake Mix Recipe is easy to make with ingredients you already have on hand, it keeps for months... and it makes the most delicious fluffy pancakes!

Pancake mix is one of those things we always have on hand.  My kids love pancakes and now that they’re older, they make their own.  It’s really easy to make pancakes from scratch but it’s even easier to whip up a big batch mix using my favorite pancake mix recipe and you’ll have quick pancakes for weeks to come.

Just a few dry ingredients and you’ve got perfect mix for just pennies!  In fact, most pre-made baking mixes are typically simply mixtures of very simple, common dry baking ingredients.  The best part is you know exactly what’s in it, no strange ingredients here!

How to Make Pancake Mix

Start by mixing together the dry ingredients. These can stay in the pantry for a few months sealed in an air tight container!

When you’re ready to make your homemade pancakes, simple mix in a couple of eggs and some milk (and a dash of oil).

This pancake mix is very versatile and can be used to make blueberry pancakes (once placed on the griddle, drop a few blueberries onto the raw batter).

Add in your other favorite flavors:

  • Mashed Bananas
  • Coconut
  • Chocolate Chips
  • Cinnamon
  • Bacon & Cheddar
  • Peaches
  • Fruit flavored yogurt (reduce the milk if using)

Ingredients

DRY PANCAKE MIX INGREDIENTS:
  • 4 cups all-purpose flour
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 tablespoons sugar
TO MAKE PANCAKES
  • 1 cup pancake mix above
  • 1 egg
  • 1 cup milk
  • 1 tablespoon melted butter or oil

Instructions

DRY PANCAKE MIX
  1. Combine all ingredients. (You can easily double or triple this part)
  2. Store tightly sealed in a cool dry place.
TO MAKE PANCAKES
  1. Preheat & lightly grease a griddle or pan over medium to high heat.
  2. Combine 1 cup of pancake mix with egg, milk & butter or oil.
  3. Pour 1/3 cup batter and cook until bubbles on the surface of the pancakes have popped (about 3-4 minutes). Flip and cook until the underside is light golden (another 1 – 2 minutes).

Each 1 cup of dry pancake mix will make approximately 5 pancakes.

  1. Makes great pancakes and always have it on hand for big family breakfasts. Better than any premix from a box. 

  2. Since there is baking soda in the original recipe, is it necessary to add additional baking soda to each batch if using buttermilk?

  3. Great pancake mix! I used white wheat flour, but that was the only change I made. I did have to add a teensy bit more than 1 cup of mix to the batter, but the flavor was delicious and they were gobbled up by everyone! I will keep this mix on hand for future breakfasts. Thank you!

    1. After all the ingredients are mixed, one cup of dry pancake mix will make approximately 5 pancakes.

  4. I always have a triple batch of this made up in my cannister! And I make a gluten free version for my Grandson when he comes. Same recipe, GF flour mixture instead of regular. I love to add oatmeal also (and flax) to make them healthy. I put 1/4 cup of Old Fashioned oatmeal (and sprinkle of flax) and 1/2 cup of milk in glass container and microwave for a minute, then add other ingredients. Or, add a couple tablespoons of applesauce – you can cut down on the oil. Love your recipes!

  5. These sound so easy! We usually use a buttermilk pancake mix. Could I use buttermilk or milk w/ vinegar to give it that buttermilk flavor? Thx T

  6. Not sure I did wrong but the pancake batter was really running so I had to add 4 more tablespoons to thicken it up. Was it suppose to be 2 cups pancake mix to 1 cup milk?

    1. I haven’t tried this recipe with wholemeal flour. If you do try it, I’d love to hear how it works out for you!

    1. I think it would work. I would consider reducing the milk a little bit and adding extra butter/oil when making waffles to make sure they crisp up.
