Pancake mix is one of those things we always have on hand.  My kids love pancakes and now that they’re older, they make their own.  It’s really easy to make pancakes from scratch but it’s even easier to whip up a big batch mix using my favorite pancake mix recipe and you’ll have quick pancakes for weeks to come.

Just a few dry ingredients and you’ve got perfect mix for just pennies!  In fact, most pre-made baking mixes are typically simply mixtures of very simple, common dry baking ingredients.  The best part is you know exactly what’s in it, no strange ingredients here!

How to Make Pancake Mix

Start by mixing together the dry ingredients. These can stay in the pantry for a few months sealed in an air tight container!

When you’re ready to make your homemade pancakes, simple mix in a couple of eggs and some milk (and a dash of oil).

This pancake mix is very versatile and can be used to make blueberry pancakes (once placed on the griddle, drop a few blueberries onto the raw batter).

Add in your other favorite flavors:

  • Mashed Bananas
  • Coconut
  • Chocolate Chips
  • Cinnamon
  • Bacon & Cheddar
  • Peaches
  • Fruit flavored yogurt (reduce the milk if using)

  1. We love this recipe. I make big batch and store in container. We use it every week.

  2. Makes great pancakes and always have it on hand for big family breakfasts. Better than any premix from a box.

  3. recipe i printed states 1 c mix to 1 c milk. then, i read 2 c mix and 1 c milk. which is correct?

  4. Since there is baking soda in the original recipe, is it necessary to add additional baking soda to each batch if using buttermilk?

  5. Batter was a little thin so I used 3/4 cup of milk instead of 1 cup. Turned out good after this

  6. Can you fix the measurements on this recipe.  I see you said it should have been 2 c pancake mix to 1c of milk

  7. Great pancake mix! I used white wheat flour, but that was the only change I made. I did have to add a teensy bit more than 1 cup of mix to the batter, but the flavor was delicious and they were gobbled up by everyone! I will keep this mix on hand for future breakfasts. Thank you!

  8. Great idea! How much mix does it make?

    • After all the ingredients are mixed, one cup of dry pancake mix will make approximately 5 pancakes.

  9. I always have a triple batch of this made up in my cannister! And I make a gluten free version for my Grandson when he comes. Same recipe, GF flour mixture instead of regular. I love to add oatmeal also (and flax) to make them healthy. I put 1/4 cup of Old Fashioned oatmeal (and sprinkle of flax) and 1/2 cup of milk in glass container and microwave for a minute, then add other ingredients. Or, add a couple tablespoons of applesauce – you can cut down on the oil. Love your recipes!

  10. These sound so easy! We usually use a buttermilk pancake mix. Could I use buttermilk or milk w/ vinegar to give it that buttermilk flavor? Thx T

  11. Is there a way to get the nutrition facts on this?

  12. Not sure I did wrong but the pancake batter was really running so I had to add 4 more tablespoons to thicken it up. Was it suppose to be 2 cups pancake mix to 1 cup milk?

  13. I’ve made your recipe several times now. I only add vanilla to the mix. Pancakes are amazing!

  14. Could you use wholemeal flour with the same measurements? Thanks

  15. Can waffles be made with this recipe? Sounds easy and nice to have around instead of the store bought ix.

  16. When I make pancakes I usually add some cinnamon to the batter for something different.
