While they’re certainly not a traditional quesadilla, this recipe transforms leftovers bits an pieces into a delicious meal!
These easy cheesy quesadillas are filled with all the leftovers from your charcuterie board for a crispy, cheesy lunch or dinner!
Serve it with a drizzle of honey for a new anytime favorite.

What You’ll Need For These Quesadillas
- Meats: Use a combination of leftover charcuterie meats; almost anything goes!
- Cheese: Like the meats, you can use any type of cheese. Stronger cheeses like blue cheese can overpower the other ingredients, so use them in moderation.
- Antipasti: If your charcuterie board has items like olives or artichokes, they’re also delicious in these quesadillas.
- Tortillas: I use large 10-inch flour tortillas—smaller bite-sized tortillas will work too.
- Honey: While it’s optional, a drizzle of honey before serving takes these to the next level.

- 2 large flour tortillas
- 4 to 6 ounces charcuterie meat about 1 cup chopped
- 6 to 8 ounces assorted cheese
- 2 tablespoons finely chopped olives optional
- 1 tablespoon olive oil
- honey for serving, optional
- fresh herbs for garnish, optional
Instructions
- Place the charcuterie meat on a large cutting board and chop into small pieces.
- If the cheese is in large pieces, grate it with a cheese grater. If it is smaller pieces, finely chop it with a knife.
- Heat a small skillet over medium high heat. Add the meat and cook until crisp while stirring, about 3 to 4 minutes.
- On one half of the tortilla, add half of the cheese, half of the crisped meat and 1 tablespoon of olives if using. Fold the tortilla overtop and brush both sides lightly with olive oil. Repeat with the remaining ingredients.
- Heat a large 12-inch skillet over medium heat. Place both quesadillas in the skillet and cook for 3 to 4 minutes, or until browned and crispy and the cheese has started to melt. Flip the quesadillas over and cook for an additional 2 to 3 minutes or until crisp.
- Remove from the skillet and transfer to a cutting board. Cut into 3 triangles. Drizzle with honey and garnish with fresh herbs if desired.
