Bacon Cheeseburger Bombs!

Bacon Cheeseburger bombs are not only delicious, they’re simple to put together and my kids just gobble them up…  who am I kidding, so do I!!

A warm crispy sesame crust loaded up with gooey cheese, seasoned ground beef, onions, bacon and all the fixin’s packed into one neat tidy little bundle!  The best part is that these are actually very quick to make!

These are actually a really  great simple dinner, lunch or even a great snack.  If you have any leftovers, these reheat perfectly.  We make them ahead of time and add them to lunches.  Not only do they kids love them, they take about 30 seconds to reheat and are so much better than store bought pizza pockets!

You can find biscuits in the refrigerator section of most supermarkets making these extra easy and quick.  If you don’t want to use pre-made biscuits, you can use homemade biscuits and get great results!  Mushrooms or grated carrots are the perfect way to add some extra veggies to this recipe!

If you have any leftover beef mixture, it’s delicious in a roll or as a wrap for a quick lunch…  or add it to a grilled cheese for a truly amazing sandwich!

Bacon Cheeseburger Bombs

Ingredients  

  • 1 (16.3 ounce each) can refrigerated biscuits
  • 1 pound lean ground beef
  • ½ onion finely chopped
  • 3 slices bacon chopped
  • cup cream cheese
  • 1 tablespoon ketchup
  • 2 tablespoons barbecue sauce
  • 1 teaspoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 5 ounces cheddar cheese cut into 10 cubes
  • 1 egg white
  • sesame seeds

Instructions 

  • Preheat oven to 375°F.
  • In a large pan, brown ground beef, bacon and onion until cooked. Drain any grease.
  • Add cream cheese, ketchup, barbecue sauce, mustard and Worcestershire sauce. Stir over low heat until cream cheese is melted. Allow to cool.
  • Roll each biscuit out very thin. Place 2 tablespoons beef mixture on each biscuit and add 1 square of cheese. Wrap the biscuit around the beef/cheese and tightly seal the edges.
  • Place biscuits on a parchment lined pan seam side down. Brush with egg white and sprinkle with sesame seeds.
  • Put them in the oven and turn down the heat to 350°F. Bake 13-16 minutes or until lightly browned.
  • Serve warm.

Notes

Contents will be very hot! If your store or area doesn’t have canned biscuits you can substitute homemade biscuits.

  3. Can you make these up and refrigerate until right before wanting to serve and bake them then? Or would they get greasy?

    1. I haven’t tried making them ahead and refrigerating them. Hopefully someone has and can offer you some insight.

      1. I made the meat mixture and refridgerated it. I waited to stuff the biscuits until I was ready to bake them

    2. These are great! I made mine in the toaster oven so you have to reduce the heat so the biscuit cooks completely. I cooked them at 250 for 20 minutes.
      Parchment paper works great.
      I can pack them for my lunch at work. I am going to play around with the seasonings a bit.

  5. Hi! This looks delicious! But is there anything one can use instead of the canned biscuits? I live in Norway, and we don’t have that here…

    1. You could make your own version of biscuits by preparing rolled buttermilk biscuits or these are also known as scones in Australia. :)

  6. I made these and kept eating them until I was stuffed! Everyone who tried them couldn’t believe how good they were. I did end up with way too much filling for the amount of biscuits suggested, but I had 4 cans of biscuits, and was more than happy to keep popping these babies into the oven! I also left out the bacon, but might try it next time.

    1. I have not tried freezing them. I have reheated them from the fridge and they were fantastic. If you do try it, please let us know!

      1. i have froze them and they work!! i reheated mine in a toaster oven vs the microwave.

I made these last night and was given two thumbs up by my family… a few alterations… I used 1.5 pounds of meat, more ketchup than barbecue sauce because I don’t like it… I used the big biscuits, because that was what my local store had (the recipe made up 14 bombs… had two biscuits left over) and I used shredded cheese … they were wonderful… my family likened them to hot pockets, but meatier and better crust!!

  10. I made these the other night, they are FANTASTIC!!! I recommend cutting the cheese into tiny cubes and mixing right into the meat mixture (I used pre cute sharp cheddar cubes and quartered them) It’ll give a bite of cheese in every bite, I also used 8oz of cheese :) Really easy to make and great to eat!!
