These are one of the most delicious things ever…  I probably could’ve eaten all of them myself!

You can use leftover mashed potatoes (is that even a thing??  leftover potatoes?), packaged potatoes or even just boil up a batch of potatoes and mash them!  I use cheddar because I love the flavor, any cheese will work of course, you could even use 1/2 a cheese string if it’s all you have on hand!

Be sure to try to seal the cheese in the potatoes and make sure the wrapper is completely sealed.  This will help avoid leaking and splattering.

Loaded Mashed Potato Egg Rolls

Loaded Mashed Potato Egg Rolls. Crispy egg rolls stuffed with creamy loaded mashed potatoes and gooey cheese! This may be my favorite egg roll recipe yet!

Cook Time 5 minutes
Total Time 15 minutes
Servings 8

Ingredients  

  • 2 cups prepared or leftover mashed potatoes
  • ¼ cup bacon bits or crumbled cooked bacon
  • 2 green onions thinly sliced
  • 1 egg
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 8 sticks of cheese approx. 3″ long by ¼″ square
  • 8-10 Egg Roll Wrappers

Instructions 

  • Combine cooled mashed potatoes, bacon bits, green onions, egg, onion powder, garlic powder and pepper in a large bowl. Mix until well combined.
  • Wrap about 3 tablespoons of the mashed potato mixture around each stick of cheese trying to ensure it is completely covered (this helps prevent leaks).
  • Lay each egg roll wrapper out with a corner pointing towards you. Place your mashed potato and cheese filling in the center of each wrapper. Fold in the sides and roll the wrapper tightly. Use a dab of water to secure the tip of the wrapper. (If you don’t know how to roll an egg roll it usually shows on the package).
  • Note: It is important to make sure the sides of the wrapper are tucked in holding the ingredients in. If they leak, it can cause splattering.
  • Preheat oil to 350°F. Fry each egg roll for about 4-5 minutes or until browned and crispy.
  • Serve hot with sour cream for dipping.

  1. You are seriously causing me to suffer from extreme sleep deprivation. I started by wanting to copy out your recipe for Loaded Mashed Potato Cakes. And then I saw the one for the Egg Rolls, and then I saw the one for the Bacon Cheeseburger Egg Rolls, and then . . . well, now it’s 2:00 a.m. I am 68 years old. I need my sleep (no need to worry about Beauty Rest — that’s a thing of the distant past!). And what’s this business about “Pinning”? I don’t know what that means, or how to do it. But in spite of tripping over the bags under my eyes, I really appreciate the wonderful recipes. Thank you for sharing them, and please, keep them coming.

  3. my wife and i just made the Loaded Potato Egg rolls. They were easy to make and o so good! Can’t wait to make these for friends and family

  4. Just made these, they are the bomb! I used store-bought mashed potatoes already flavored, I put a paper towel over the store-bought mashed potatoes to absorb any liquid that might be presen. I added bacon that goes in the microwave, which I crumbles, put in scallion, garlic powder, onion powder, one egg, salt-and-pepper. Tasted it, delicious! I also cut the cheese in half and made it shorter and started to rule they are gorgeous and I cannot wait to bring them in to work. Total time from start to finish about 40 min. Just started my oven I’m going to try and bake one.

    1. I haven’t tried it but I’m sure that would work just as well! You may need to adjust cooking time or oil temperature according to the package directions on your spring roll wrappers.

      1. I’ve noticed you’ve answered this question a few times… And since I’m marred into an Asian family (egg rolls, spring rolls @ every party!) And don’t like fried food one of my quick and low oil hacks is to just lightly spray a cookie shred with cooking spray, lay out the egg rolls then spray the egg role lightly too. Half way through cooking flip them over and wala! Crispy rolls!
        Ps…. The is my same haack for even fries too as. Hate frying but love the crispness of it ;)
