  • Kitchen tip: When browning ground beef, I like to let it brown for 3 to 4 minutes before breaking it up. This gets a nice brown crust on one side adding extra flavor.

Ingredient Notes for Ground Beef Stroganoff

  • Ground Beef: Use lean beef as it has a bit of fat for flavor.
  • Mushrooms: I prefer brown or cremini mushrooms for a deeper mushroom flavor, but any type of mushrooms will work in this recipe.
  • Stroganoff Sauce: Do not use low-sodium beef broth, or the sauce will taste flat.
  • Seasonings: Simple but delicious salt, pepper, onion, and garlic. Feel free to add other seasonings to taste.

Variations

  • Stir in a teaspoon or so of Dijon mustard.
  • Add a sprig or two of fresh thyme or 1/4 teaspoon of dried thyme leaves.
  • To make the sauce extra creamy, add a can of condensed mushroom soup or up to 4 ounces of cream cheese.

Serving Suggestions

Any starchy, carby pasta, potato or rice is great with stroganoff.

Serve this with a side of egg noodles, mashed potatoes, or riced cauliflower.  

Holly’s Beef Stroganoff Tips

  • Simmer uncovered to thicken the sauce.
  • Don’t boil the sour cream or it may curdle, add it just before serving. Greek yogurt is a good substitute.
  • To thicken the sauce further, you can add a little bit of extra cornstarch slurry to reach the desired consistency. Mix equal parts cornstarch and cold water, and add a little bit at a time while stirring the sauce.
  • Additional herbs can be added to taste.

Leftovers and Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days.

  • Freeze: Freeze the stroganoff without noodles.
  • Reheat: If frozen, thaw leftovers in the fridge overnight. Heat in the microwave or on the stovetop on low heat until warm.

Ingredients  

  • 1 pound lean ground beef
  • 1 small onion diced
  • 1 clove garlic minced
  • 12 ounces mushrooms sliced
  • 3 tablespoons all-purpose flour
  • 2 cups beef broth see note, not low sodium
  • 2 teaspoons Worcestershire sauce
  • 1 beef bouillon cube optional
  • salt and black pepper to taste
  • ¾ cup sour cream
  • 2 tablespoons chopped fresh parsley

Instructions 

  • Brown the ground beef, onion, and garlic in a large skillet over medium-high heat, trying not to break the beef up too much, until no pink remains. Drain any fat.
  • Add the mushrooms and cook for 3 minutes. Stir in flour and cook 1 minute more.
  • Add broth, Worcestershire sauce, bouillon cube, salt, & pepper and bring to a boil. Reduce to a low boil and cook uncovered for 10 minutes until thickened.
  • Meanwhile, cook the egg noodles according to package directions.
  • Remove skillet from the heat and stir in sour cream and parsley. Serve over egg noodles.

Notes

  • *Do not use low sodium beef broth. You can use boxed broth or condensed broth.
  • If using canned condensed broth, it has more flavor and the beef bouillon cube is not needed.
  • Ground beef gives the best flavor. If you substitute another type of ground meat, such as ground turkey, add a beef bouillon cube for a richer flavor.
  • Fresh mushrooms are best but canned will work too. Use any combination of white, cremini, or portobello.
  • Do not simmer or boil the sour cream or it may curdle. Greek yogurt can be used in place.

  1. Loved this easy comfort food recipe. Made it tonight with the following changes. I didn’t have enough fresh mushrooms, so I did half mushrooms and half fresh asparagus that I cut in 1″ pieces. Just added with the mushrooms. I used the Artisan Beef Broth in a box…was really good and added flavor. Also added a few shakes of sriracha hot sauce and about a tsp of dijon and some dried thyme. Also did not have sour cream but I had heavy cream, so used that instead. I think with the addition of the dijon it was fine and worked and still had the little kick that sour cream would’ve added. I know if sounds like I completely changed it but I didn’t….just made some minor modifications based on what I had on hand and it was DELICIOUS!!!5 stars

Easy to make, as indicated, which was a lot of points in its favor, however, we found the amounts to be way off (not nearly enough garlic or Worcestershire sauce; way too much onion, mushrooms, and sour cream), and overall the dish needed a lot more flavor. We found it very nondescript in the end.2 stars

  3. This is AMAZING!!! It was quick, easy, and very tasty! I didn’t have fresh mushrooms so used a large can of sliced mushrooms. It was so good that both my daughter and daughter-in-law wanted the recipe. My daughter plans to make it this week. It is definitely a keeper!!!5 stars

  8. Do you know of a beef broth that doesn’t have msg or a hidden form of it (there are about 37 hidden forms of msg). I can’t find one and msg gives me migraines. I really want to make stroganoff so would love your msg free (and its counterparts) suggestion. Thank you so much!

    1. Hi Kristen, we’ve tried Pacific brand to avoid MSG, but I can’t say for sure it may not have a derivative that will affect you. You can find it at many grocery stores and at Amazon.

  14. Delicious! I’ve been craving stroganoff. I grew up with the Hamburger Helper version and made it a time or 2 in the instant pot too. Love this version. We leave the shrooms out. But the sauce is amazing!4 stars
