You may have heard of Rocky Road ice cream, and this treat has the same flavor in a fudgy little bite.

  • Quick & Easy: Since it’s no-bake, rocky road is quick to prepare.
  • Customizable: Swap out ingredients, and add nuts or your favorite dried fruits.

Ingredients in Rocky Road

The ingredients you need to make Rocky Road are pretty simple and you very likely already have them on hand!

I use a combination of chocolate, peanut butter, nuts, and marshmallows.

I usually choose pecans or walnuts but you can use whatever nuts you like best (or have on hand)!

You can use colored marshmallows instead of white, add raisins or dried cherries, chocolate chips or cereal bits.

Use your imagination and your family’s favorites to create a dessert square everyone will love!

  • Chocolate chips: Semi-sweet chocolate chips keep this treat from being too sweet; dark chocolate chips can also be used.
  • Peanut butter: Use either creamy or crunchy peanut butter.
  • Nuts: Walnuts and peanuts add texture and flavor. Swap in almonds or pecans if you’d like.
  • Mini marshmallows: These give a great texture and add sweetness. While I prefer the flavor with white marshmallows, you can use fruit-flavored marshmallows in place.

How to Make Rocky Road

Rocky Road is a simple and easy candy that doesn’t require lots of attention. No messing around with candy thermometers or worrying about temperatures.

  1. Melt the peanut butter and chocolate together over low heat according to the recipe below.
  2. Cool slightly and stir in the add ins.
  3. Chill, slice, and enjoy.

Rocky Road

This easy Rocky Road recipe is a simple fudgy treat loaded with chocolate, peanut butter, nuts and marshmallows!

Ingredients  

  • 2 cups semisweet chocolate chips
  • ¾ cup creamy peanut butter
  • 1 cup chopped walnuts
  • ½ cups chopped peanuts
  • 3 cups miniature marshmallows

Instructions 

  • Line a 9 x 9 inch pan with parchment or foil.
  • In a medium-sized pot over low heat, melt together the chocolate chips and peanut butter, mixing until smooth.
  • Stir in walnuts and peanuts and remove from heat. Allow to cool for 3-4 minutes.* Fold in the marshmallows until coated.
  • Spread mixture into the lined pan and refrigerate for 2 hours or until firm.
  • Cut into 16 squares and serve.

Notes

The chocolate and peanut butter can be melted in the microwave at 60% power for 45 seconds. Stir and continue cooking until melted, stirring every 30 seconds.
*It is important to cool the chocolate mixture a bit so that the marshmallows remain intact and do not melt.
Place Rocky Road in a sealed container or wrap it up tight in plastic. Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.

  2. Your site is the first place I go when looking for a recipe for any dish! When I wanted to make Rocky Road, of course I found this one! This was very easy to make and has so many options for add ins. I added my own touch and pressed crushed graham crackers on top. So yummy!5 stars

    1. Yes, I would recommend cutting them into smaller pieces (kitchen scissors make this task easier). You’ll need about 24 large marshmallows.

  3. The peanut butter was a mistake for me. It made it way too rich and lost a lot of the chocolate goodness. I thought I would love since I love peanut butter and chocolate combinations, but this was a miss. Might try again without PB, increase marshmallows, and add some sea salt.
    I also recommend freezing instead, as my set did not cut cleanly after chilling for several hours.2 stars

    1. Hi Garry, walnuts are a classic for Rocky Road but you can definitely swap them out for any nut you prefer! Additional peanuts would be a great option.

    1. I don’t think the peanut butter chips would give it the same consistency. This recipe does not use condensed milk.

  5. So the Aussie way is with cherries and coconut –but how much of each?? and do I still use the chocolate and marshmallows? (I would like to omit the nuts, if possible)

  6. Just made this today and it’s awesome! I didn’t have any peanuts and less than a cup of walnuts, so I put about half cup walnuts, cup of almonds and some leftover mini Smarties. The result is amazing!5 stars

  7. Made this recipe trying the Aussie version with the cherries in it and it was a welcome hit! I also used pecans instead of walnuts because they aren’t as bitter. As long as you have the chocolate/marshmallow/any nut combo happening, you’ve a Rocky Road, it’s the finishing touch that makes it a ‘Supreme!’5 stars

    1. Have you tried substituting Avacado? You substitute cup for cup. I think one large avacado would do the trick, just make sure you refrigerate it, afterward, It will spoil because it’s a raw food, but it will give you the texture. 

      1. Thank you for the alternative, Caroline. My son is allergic to PB so I was wondering what I could use a substitute. I wonder how Nutella or almond butter or sunflower butter would be. Guess I’ll just have to give it a try! Oh darn…I’ll have so many batches! HAHA
