Creamy Cucumber Tomato Salad is the perfect dish for spring and summer (in fact, I make it all year round). It is versatile, packed with deliciously healthy flavors and it lasts for several days in the fridge! I love options that I can prep in advance and enjoy all week for lunch or a quick side at dinner.
Sometimes the simplest ingredients make the best dishes, in this case ripe juicy tomatoes, crisp cucumbers, sweet white onion and fresh herbs tossed in a delicious creamy dressing. The combination of tomatoes, cucumbers and onions is classic (like in Greek pasta salad) and for good reason!

The cucumber in this salad makes it very refreshing, I like to leave the skin on the cucumber for added flavor and texture. You can use any kind of tomato in this recipe, including cherry or grape. Whatever you prefer, or have on hand will work well. Because the flavors of this dish are very simple, you’ll want to choose the best tomatoes you can and if it’s summer and you happen to have garden fresh, that’s definitely a bonus!
I mentioned that this recipe is versatile; you can use the tomato of your choice, however you’ll want to use white onions (with a white papery skin). These are different than a typical yellow onion as they have a milder flavor and are a bit sweeter. I sometimes soak the onion slices in ice water while I’m preparing the rest of the ingredients so it has a little bit less “bite”.
Keeping in the versatile spirit of this recipe, you can use your favorite herbs in this recipe (I used parsley, dill and basil), but whichever you choose, fresh is best. There is only one ingredient that I recommend sticking to solidly, and that is the delicious Ranch dressing!

Creamy Cucumber Tomato Salad pairs well with grilled chicken for a quick dinner, or it makes for a great healthy lunch. The simple ingredients make it an easy weeknight staple and you can grab everything you need at Walmart. Considering that the salad gets yummier as it rests in the refrigerator, it is practically perfect for picnics and parties; you can make it ahead of time and serve later for rave reviews!

Delicious, quick and easy! Made a small batch, without the cucumber basil ranch dressing, and it was still good. I will definitely be making it again – with the dressing you have listed. Thanks for sharing; it will become one of my favorites.

I love this! So good with fresh tomatoes and herbs from the garden. I just had plain old Hidden Valley Ranch, so I plucked some fresh basil and chopped that up for added flavor.

I love your recipes. Thanks for sharing them….
I made this salad and it got watery. It tastes really good, but I have to drain it. Then I lose some of the herbs. We don’t have the Simply Ranch here. I used HV Lite ranch Cucumber.. what can I do to stop it getting watery??
Wendy, the sodium in the dressing will cause the cucumbers and tomatoes to sweat. You can seed and remove the watery pulp in the tomatoes, using only the meaty part, and you can slice the cucumber, and dry the slices between paper towels, removing as much moisture as possible, or place the sliced cucumbers in a bowl, and lightly salt. After they sit for a while, drain the liquid from the cucumbers, and rinse and dry, and then use in your salad.
Wow, looks delicious. On my grocery list.
Wow
I love your recipes and can’t wait for my garden to have tomato and cucumbers for a salad.
Thank you Becky!
I just made this, but with red onions instead of white, because they’re my favorite. I made my own ranch dressing. Delicious!
