Cottage Cheese and Noodles

Cottage cheese and noodles is a creamy, comforting dish made with egg noodles, sautéed onion, and tangy cottage cheese.

Ingredients  

  • ¼ cup salted butter
  • 1 small yellow onion diced
  • 8 ounces wide egg noodles
  • 8 ounces cottage cheese
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • sour cream for serving, optional

Instructions 

  • Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package directions. Drain but do not rinse, add the pasta back to the pot and set aside.
  • Meanwhile, in a medium skillet, melt the butter over medium heat. Add the onion and cook until softened and it begins to brown slightly, about 10-12 minutes.
  • Add the onion to pasta along with cottage cheese, salt, and pepper. Cook over medium heat until the sauce is heated through.
  • Serve with a dollop of sour cream and garnish with parsley if desired.

Notes

Store leftover cottage cheese and noodles in a covered container in the fridge for up to 2 days. Reheat on the stovetop or in the microwave with a splash of milk to loosen the sauce.

  3. My husband was born in Hungary & I learned all the Hungarian dishes. He taught me to make something he called “Slider”. It was pasta noodles, and then equal parts cottage cheese mixed all together. Heated in the oven & then topped with lots of crunchy bacon. This recipe reminded me of the Hungarian recipe so much but I added equal parts sour cream and still topped with crunchy pieces of bacon.5 stars
