Ingredient Tips for Cottage Cheese and Noodles

  • Cottage Cheese: Full-fat cottage cheese will make the richest sauce, but you can use any kind you like. For an even coating, opt for small curd cottage cheese.
  • Noodles: Make homemade egg noodles or buy them. Choose wide egg noodles for a classic texture.

Variations

  • Match the noodles to the menu and try different seasoning blends like taco, Greek, or a simple lemon pepper seasoning.
  • Some other pasta shapes to try are penne, bowtie, cavatappi, or heavier spaghetti varieties like bucatini.
  • For a perfectly smooth sauce, puree the cottage cheese with an immersion blender before using. Ricotta can be used in place of cottage cheese if desired.

How to Make Cottage Cheese and Noodles

  1. Cook egg noodles according to package directions. Drain but don’t rinse.
  2. Cook the onion in butter until lightly browned.
  3. Add onion to the pasta with cottage cheese and seasonings (full recipe below) and heat through.

Serve with sour cream and parsley if desired.

Holly’s Pro Tips

  • Mix the noodles with butter first to help the cottage cheese melt evenly.
  • To make ahead, boil the noodles and refrigerate. Then reheat with butter and cottage cheese.
  • When reheating leftovers, make sure to mix in a little milk to loosen the sauce.
