- 1½ cups orzo
- 2 cups cooked chopped chicken
- 2 cups broccoli florets bite sized
- 3 cups chicken broth
- 1 cup whole milk
- 1 teaspoon garlic powder

Instructions
- Preheat the oven to 375°F. Lightly grease a 9×13 inch baking dish.
- To the baking dish, add orzo, chicken, broccoli, broth, milk, garlic powder, Italian seasoning, salt, pepper. Mix well.
- Cover the dish tightly with foil or a lid.
- Bake for 35 minutes. Remove the foil, stir gently, and check the orzo for doneness. If needed, cover and bake for an additional 5 to 10 minutes or until the orzo is tender (there will still be some extra liquid in the pan).
- Once the orzo is tender, stir in the parmesan and cheddar cheese until fully incorporated. Let rest for 5 minutes before serving.
Notes
- Frozen broccoli can be used, no need to thaw first.

Sounds delicious. Due to dietary restrictions can I use 2% milk in lieu of whole milk?

I followed the recipe exactly as written but I had too much liquid left, approximately between 1/2 and 2/3rds cup, so cooked an additional 7 minutes which overcooked the orzo and didn’t do much to get rid of the excess liquid. The only deviation was using frozen broccoli, which was given as a substitute. I think that the frozen broccoli contributed to the excess liquid. The Parmesan cheese was a dominant flavor and we liked the way the whole dish tasted and the simplicity of it. I will try this again but I will either increase the amount of orzo or decrease the liquid slightly so that it doesn’t resemble a very loose risotto.
I’m glad you enjoyed the flavor and simplicity. It could be the brand of orzo but also, in the step 3. photo, you can see that there is still quite a bit of liquid before adding the cheese. It will thicken a bit more upon adding the cheese as well as when the dish cools. I look forward to hearing how it goes for you next time!
