  • Flank Steak or Sirloin Steak: Both work well, but flank steak is especially flavorful.
  • Bell Peppers: I like to use a mix of different colors. Add them towards the end of the cooking time for a crisp texture.
  • Fresh Ginger: Freshly minced ginger gives the sauce the best flavor, but dry ground ginger works too.
  • Soy Sauce: This adds the savory, umami flavor to the sauce. Use regular or reduced-sodium soy sauce.
  • Honey: A little honey balances the salty soy sauce and adds a touch of sweetness. Replace with brown sugar with similar results.

How to Make Slow Cooker Pepper Steak

  1. Add beef, peppers, onion, and sauce ingredients to the slow cooker. Cover and cook until the beef is tender.

  1. Stir in cornstarch slurry and cook until thickened.

Slow Cooker Pepper Steak Secrets

  • Slice Against the Grain: Slicing the beef against the grain is the key to getting tender strips of steak. Use a sharp knife and cut across the muscle fibers.
  • Adding the Peppers: For softer bell peppers, add them at the beginning of the cooking time. For tender-crisp bell peppers, add them during the last hour of cooking.
  • Thicken on High: Create a slurry, and mix the cornstarch with cold water before stirring it into the cooking liquid, and add it 20-30 minutes before cooking time is complete.
  • Rest Before Serving: Once thickened, let it set uncovered for a few minutes so the sauce clings to the beef strips when serving.

Storing Leftovers

  • Refrigerate: Transfer leftovers to an airtight container and use within 4 days.
  • Freeze: Freeze cooled pepper steak in airtight, freezer-safe containers or zippered bags for up to 4 months. Defrost overnight in the refrigerator.
  • Reheat: Reheat individual portions in the microwave or on the stovetop on low heat. Remove from heat promptly to avoid overcooking.

Ingredients  

  • pounds flank steak or sirloin, sliced ½-inch thick
  • 3 bell peppers any color, thickly sliced
  • 1 large onion thickly sliced
  • 1 tablespoon minced fresh ginger or ¾ teaspoon ground ginger
  • 1 cup beef broth or beef stock
  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • ¼ teaspoon red pepper flakes more to taste

For Thickening

  • ¼ cup cornstarch
  • ¼ cup water
  • sliced green onions and sesame seeds, for garnish

Instructions 

  • Add sliced beef, peppers, and onion to a 4-quart or 6-quart slow cooker.
  • Add broth, soy sauce, honey, Worcestershire sauce, garlic powder, and red pepper flakes. Stir to combine.
  • Cover and cook on low for 5 to 6 hours or high for 3 hours, or until the beef is tender.
  • In a small bowl, whisk cornstarch and water. Stir it into the slow cooker, cover and cook on high 20 to 30 minutes or until thickened.
  • Taste and season with salt and pepper as needed. Garnish with green onion and sesame seeds. Serve over rice or noodles.

Notes

Slice the steak with a sharp knife against the grain for the tenderest meat.
