How to Make White Chocolate Berry Parfaits

This is a delicious summer dessert that is simple to prepare and looks pretty for any gathering!  Fresh berries mixed with a rich creamy white chocolate layer makes a perfect summer dessert!

These can be prepared up to 2 days in advance and stored in the fridge.  Because they contain fresh whipped cream, be sure to keep them cold!

White Chocolate Berry Parfaits

This is a delicious summer dessert that is simple to prepare and looks pretty for any gathering!  Fresh berries mixed with a rich creamy white chocolate layer makes a perfect summer dessert!

Ingredients:

Cream Layer

  • 1 cup of whipping cream
  • 2 oz white chocolate
  • 1 package white chocolate pudding
  • 2 cups milk

Berries

  • 1 pint strawberries , sliced
  • 1/2 cup sugar
  • blue berries

Cake

  • 1 store bought angel food cake , cut into small squares

OR

  • 1 angel food cake prepared according to package directions , cooled and cut

Strawberry Sauce (optional)

  • cornstarch

Directions:

  1. Mix sliced strawberries & sugar. Let sit at room temperature at least 1 hour to release juices. Wash blueberries & set aside.

Cream Layer

  1. In a small saucepan, heat whipping cream and chocolate on low heat until chocolate is melted. Refrigerate until VERY cold. Once whipping cream is very cold, beat on high until peaks form.
  2. Mix pudding with milk according to package directions. Gently fold whipped cream into pudding mixture.

Parfait Assembly

  1. Drain strawberries reserving juice for sauce if desired. In each jar, layer strawberries, cream mixture, cake, strawberries, blueberries, cream mixture & blueberries.
  2. Refrigerate 2 hours before serving or overnight.

Notes:

To make Strawberry Sauce: Mix together reserved cold strawberry juice with cornstarch (approx. 1 teaspoon of cornstarch per 1/2 cup of juice). Bring to a boil over medium heat stirring constantly and let boil for 1 minute. Remove from heat and cool completely.
