These can be prepared up to 2 days in advance and stored in the fridge. Because they contain fresh whipped cream, be sure to keep them cold!
White Chocolate Berry Parfaits
Ingredients
Cream Layer
- 1 cup whipping cream
- 2 oz white chocolate
- 1 package white chocolate pudding
- 2 cups milk
Berries
- 1 pint strawberries sliced
- ½ cup sugar
- 2 cups blueberries
Cake
- 1 angel food cake prepared, cut into small squares, store bought or homemade
Strawberry Sauce (optional)
- reserved strawberry juice
- cornstarch

Instructions
- Mix sliced strawberries & sugar. Let sit at room temperature at least 1 hour to release juices. Wash blueberries & set aside.
Cream Layer
- In a small saucepan, heat whipping cream and chocolate on low heat until chocolate is melted. Refrigerate until VERY cold. Once whipping cream is very cold, beat on high until peaks form.
- Mix pudding with milk according to package directions. Gently fold whipped cream into pudding mixture.
Parfait Assembly
- Drain strawberries, reserving juice for sauce if desired. In each jar, layer strawberries, cream mixture, cake, strawberries, blueberries, cream mixture & blueberries.
- Refrigerate 2 hours before serving or overnight.
Strawberry Sauce (optional)
- Mix together reserved cold strawberry juice with cornstarch (approximately 1 teaspoon of cornstarch per ½ cup of juice).
- Bring to a boil over medium heat stirring constantly and let boil for 1 minute. Remove from heat and cool completely.
